Dessert that tastes amazing and is healthy! I used my abundance of strawberries and made a strawberry chia pudding. Topped it with sliced strawberries and cacao nibs.

Strawberries are high in vitamin C and help support immunity, this is great especially this time of year!

Chia seeds are high in Omega-3 fats and fiber

Caco nibs are high in antioxidants which lowers inflammation. They also add a nice sugar free chocolate crunch!

2 cups soy milk (or any unsweetened plant milk)
3 cups or 1lb strawberries
1 Tbs maple syrup
1 tsp vanilla
1/4 cup chia seeds

Blend everything together except the chia seeds. Add in the chia seeds to the blended mixture and refrigerate for at least 2 hours. Add toppings such as fresh fruit, cacao nibs, granola and enjoy!

One of the ways I used my celery leaf pesto was by spreading it on ancient grain bread topped with roasted mushrooms, zucchini, and tomatoes then drizzled with my favorite balsamic vinegar! Yum!

I love using fresh produce from the farm markets and it's so quick and easy to roast or grill in the air fryer!

Celery Leaves 5 Ways!

Typically when you purchase celery at the grocery store you don't get all the leaves. I recently purchased celery from the farm market with an abundance of leaves and tried 5 different ways to use them! Celery leaves help reduce chronic inflammation, protect against cellular damage, support healthy digestion, and promote heart health.

1. Celery Pesto
This sounds weird but was actually amazing!

1/2 cup raw pumpkin seeds
2 cups celery leaves
1 cup fresh basil leaves
2 cloves garlic
1/2 cup extra virgin olive oil OR vegetable broth
1 Tbs lemon juice
1/2 tsp salt

Blend until all combined and the desired consistency adding more liquid if need be.

2. Celery Smoothie

1 cup celery leaves
1 frozen banana
1/2 cup frozen pineapple chunks
1 Tbs lemon juice
1/2 tsp fresh ginger
1 cup water

Blend until combined

3. Dehydrated

This was my first time using the dehydrating setting on my air fryer. You can also use the oven. Great to add to soups in the winter!

4. Celery Ice Cubes

Blend the celery leaves with a little bit of water and freeze in an ice cube tray to add later to soups and stews.

5. Added in a Salad
The lighter green tender leaves are a great addition to a salad for some extra flavor!

Had an amazing weekend at NAVS Summerfest in Johnstown PA. I was fortunate to be a presenter about the Jumpstart Program and was at the RLMI table answering questions. Met so many wonderful people. Heard some great talks including Dr. Neal Barnard, Dr. Greger, Dr. Klapper, and Dr. Milton Mills. And of course ate some amazing vegan food and made a stop in Pittsburgh on the way home at Burgatory for a veggie burger and vegan milkshake.

I love trying new foods at the local farm stands. These are Honey Berries. They have a sweet tart flavor and many describe it as a cross between a blueberry, raspberry, and blackberry. I thought it tasted a little like a tart grape. They are packed with up to five times the antioxidants and polyphenols as compared to blueberries! Let me know if you've tried them before!

A fun twist on nachos! I used jackfruit (young green jackfruit in a can), homemade guacamole, crispy tortillas, and pickled red onions.

Jackfruit has a texture similar to pulled pork. It's usually in a can with brine so I rinse it really well to wash off the extra sodium. The next step is really important to the texture - squeeze out as much extra liquid as you can. Take your anger out on it and really squeeze it! I then sautéed it in a pan adding cumin, garlic powder, smoked paprika, and chili powder.

For the crispy tortillas- I buy corn tortillas where the only ingredients are corn and lime juice. I cut them into triangles and put them in the air fryer for 5 minutes. Healthy, crispy and delicious! You can also bake them in the oven if you don't have an air fryer.

Homemade guacamole- ripe avocados, diced onion, minced garlic, lime juice, and salt.

Thai Peanut Noodle

I used maple syrup for the sweetener, brown rice noodles, omitted the Sriracha, and omitted the cucumber.

Hearty Farro and Bean Vegetable Soup

It's still great soup weather! This is a comforting flavorful soup that is very easy to make!

1 medium onion, diced
3 cloves garlic, minced
2 medium carrots, sliced
2 medium potatoes, diced
1 cup farro, rinsed
1 can light red kidney beans
6 cups vegetable broth
2 cups chopped kale
1/2 tsp dried thyme
1/2 tsp dried rosemary
Salt to taste

Saute onion in a large pot until translucent. Add garlic and sauté and additional 30 seconds. Add vegetable broth, carrots, potatoes, farro, and herbs. Bring to a boil and then reduce heat to a simmer. Cover and cook for 25-30 minutes until the farro and potatoes are tender. Stir in kale and beans and simmer another 5 minutes.

Vietnamese Tofu with Tomato Sauce

This is a dish that I've had out before and loved so I thought I'd try making it myself!

I used fried tofu that I found at the Asian Market but you can use a block of firm tofu
2 shallots or 1 onion
3 tomatoes or 1 can of diced tomatoes
4 Tbsp water
2 Tbsp soy sauce
1 tsp maple syrup
Chopped scallions
Sesame seeds

If using firm tofu, cut into bite size pieces and bake or add to the air fryer to crisp roughly 10 minutes. Dice the onion and tomato. Saute until onions are tender. Add in the water, soy sauce, maple syrup, and tofu until well combined. Garnish with scallions and sesame seeds.

There's not many ingredients but it has a great flavor!
