Savory Spinach & Chicken Sausage Stuffed Squash
2 medium zucchini or yellow squash
8 oz chicken sausage, casing removed and crumbled
2 cups fresh spinach, chopped
2 cloves garlic, minced
¼ cup diced onion
½ tsp Italian seasoning
Salt and pepper to taste
2–3 tbsp low-sodium chicken broth, as needed
Optional: fresh parsley or basil for garnish
Directions
1. Preheat oven to 400°F.
2. Slice squash lengthwise and scoop out some of the center to create a “boat.” Place cut-side up in a baking dish and bake for about 10 minutes.
3. Meanwhile, cook the chicken sausage in a skillet over medium heat until browned and fully cooked.
4. Add onion and garlic and cook until softened.
5. Add spinach and Italian seasoning. Cook just until the spinach wilts. Add a splash of chicken broth if needed to keep everything moist.
6. Spoon the sausage and spinach mixture into the squash.
7. Return to the oven and bake another 15–20 minutes, or until the squash is tender.
8. Garnish with fresh herbs and serve warm.
Tip: If you’re making this for a stricter weight-loss plan, check the chicken sausage ingredients carefully, many contain added sugar, cheese, or oils. A simple lean ground chicken seasoned like sausage works beautifully too.
