Adding fruit to savory salads is one of the easiest ways to sneak in an extra daily serving while creating balance between sweet, savory, crunchy, and fresh flavors. Use fresh or dried fruit, whatever you’re craving or already have on hand.

🥗 How to Build a Plant-Powered Salad 🥗
Choose one+ ingredient from each category below, then toss together in a bowl. That’s your salad, no recipe required.

THE FORMULA:
Base Greens + Crunch + Fruit + Plant Protein + Dressing + Toppings

🥗 In this salad, I used what I had in the fridge and herb garden 🪻

🥬 Base → pre-washed spring greens
🌰 Crunch → homemade sourdough croutons + pecans + pistachios
🫐 Fruit → blueberries
🌾 Plant Protein → quinoa
🍯 Dressing → olive oil + apple cider vinegar + dijon + raw honey + sea salt & pepper
🫜 Toppings → chive blossoms, fresh mint, sharp cheddar (vegan as needed), radish + cucumber

🍓 Eat More Fruit Series: Episode 1

To be honest, I'm not a big fruit lover and find it difficult to eat everyday unless it's super ripe and juicy. Are you the same?

If you’re looking for simple, nourishing ways to add more fruit into your meals, this berry bowl is a beautiful place to start.

🫐 Berry Crunch Bowl 🌰

Quick | Easy | Flexible | Creamy | Crunchy | Sweet | Juicy | Delicious

Ingredients:
* 1 cup Berries, organic (fresh or frozen)
* 1/3 cup unsweetened yogurt (coconut or Greek)
* 1/4 cup homemade granola w/ nuts
* 2 Tbsp h**p seeds
* 1 Tbsp ground flaxseed
* 1 Tbsp cacao nibs, unsweetened
* A splash of unsweetened soy milk, optional (helps to loosen the mixture)
* Dash of Ceylon cinnamon

Method:
1. Dump, stir, enjoy.

🫐 Berries: The fresh organic raspberries + blueberries at are especially sweet right now (give them a taste before you buy). Their organic frozen berries are also a great option, and the best value here in - at least until local berry season arrives! 🤗

🩺 Benefits: Full of fiber, antioxidants, protein, omega-3’s, probiotics, vitamins & minerals.

🍱 This Sweet Sriracha Protein Bowl is one of my faves! It’s & 🤩

🥒 I swap out the baby bok choy with whatever I have on hand - or sometimes it’s a simple diced cucumber when I’m short on time.

🌿 Served with dry-toasted sesame seeds and sliced green onions.

🍱 I make a double batch of the 🌶️ tofu on my Sunday meal prep day. The Sweet Sriracha Tofu (📕 pg. 121) can be cubed and added to lettuce wraps + stir-fries later in the week… mix & match style!

🫚 Fresh ginger + turmeric are always in my freezer.

🫙 I cut the fresh roots into 1/4-inch coins (peel if not organic) and freeze them in small jars so they’re ready for smoothies, one-pan curries, soups, or an Ayurvedic Detox Tea in my French press.

😊 Ginger + turmeric are known for their anti-inflammatory properties and for gently supporting digestion and gut health.

Tips:
🌶️ Add a pinch of black pepper with turmeric to help your body better absorb its active compound, curcumin.

⏰ Meijer often stocks organic ginger and turmeric by (no need to peel).

🍊Veggie Loaded Orange Sesame Rice 🥦

This balanced rice dish is plant-powered and full of & umami goodness!

Ingredients:

Rice + Veggies
* 8 ounces shelled edamame (fresh or frozen)
* 1 cup dry brown rice (or use frozen)
* 2 tsp sesame oil (or broth or water as needed)
* 2 green onions, thinly sliced
* 1 bunch broccolini, cut into 1-inch pieces
* 1 cup shredded carrots
* ½ cup frozen peas

Orange Sesame Sauce (page 65 in cookbook)
* 1 navel orange, juiced
* ¼ cup reduced-sodium tamari (or coconut aminos)
* 2 Tbsp lime juice (or rice vinegar)
* 1 Tbsp pure maple syrup
* 1 Tbsp toasted sesame oil
* 1 tsp sriracha, more to taste
* 2 medium garlic cloves, minced
* 2 tsp frozen minced ginger

Method:
1. Cook the edamame: Cook according to package directions. Set aside.
2. Cook the rice: Cook according to package directions.
3. Prepare the sauce: add all ingredients to a medium-size mixing bowl and whisking to combine.
4. Cook the veggies: Heat oil in a large skillet over medium-high heat. Once hot, add green onion, broccolini, peas and carrots. Sauté for 3-4 minutes or until crisp-tender, stirring occasionally.
5. Combine: Add cooked rice, edamame, and sauce to the skillet & stir to combine. Cook over medium-high heat for 3-4 minutes, stirring frequently.
6. Serve: Divide between 4 bowls and enjoy!
7. Store leftovers in an airtight container for up to 4 days or freeze for up to a month.
