So easy your boyfriend could make it šŸ˜‚ jk jk, men can cook, this one’s just THAT easy

Recipe credit to Mediterranean Food & Diet | Easy Recipes | Suzy Karadsheh, this lemon garlic salmon is a new favorite. Baking it in foil keeps it juicy, then a quick broil gets the top golden.

INGREDIENTS (serves 6)
2 lbs salmon fillet
skin on salt
3 large lemons
3 tbsp extra virgin olive oil
5 garlic cloveschopped
2 tsp dried oregano
1 tsp sweet paprika
1/2 tsp black pepper
Fresh parsley, chopped

STEPS
1. Preheat oven to 375°F. Line a sheet pan with foil and brush with olive oil.
2. Zest one lemon and juice two, then whisk with olive oil, garlic, oregano, paprika, and black pepper.
3. Pat salmon dry, season with salt, and place skin side down on the foil. Pour the sauce over top.
4. Slice the remaining lemon and layer rounds on top. Fold the foil up and over, leaving room for steam.
5. Bake 15 to 20 minutes until almost cooked through.
6. Open the foil and broil on high for 2 to 3 minutes until golden.
7. Top with parsley and serve with lemon wedges.

šŸ‘ Peaches are in season right now, so I’m turning them into a sweet and spicy salsa for chicken. This one’s fast, fresh, and ready in under 20 minutes.

INGREDIENTS (serves 4)
4 chicken breasts
1 tsp salt
1/2 tsp black pepper
1/2 tsp cumin
2 tbsp olive oil Graza
2 ripe peaches, diced
1 jalapeƱo, seeded and diced
1/4 cup red onion, finely chopped
1 tbsp lime juice
1 tbsp honey Local Hive Honey
2 tbsp fresh cilantro, chopped
STEPS
1. Season chicken with salt, pepper, and cumin on both sides.
2. Heat olive oil in a pan over medium high heat. Cook chicken 5 to 6 minutes per side until golden and cooked through.
3. Let chicken rest 5 minutes before slicing.
4. Mix diced peaches, jalapeƱo, red onion, lime juice, honey, and cilantro in a bowl.
5. Slice chicken and top with the fresh peach salsa.

1 cup soda water
Fresh watermelon cubed
Chamoy
Tajin for the rim
2 jalapeƱo slices
A pinch of salt
Juice of 1/2 lime

Quick prep: Rim your glass with tajƭn. Blend the watermelon and strain if you want it smoother. Add lime juice, chamoy, and a pinch of salt. Top with soda water and ice. Garnish with jalapeƱo.

Lazy Sushi Bowl šŸ£ (no rolling required)
The easiest, most affordable lunch for busy 9 to 5ers. Sushi flavors, zero skill required.
Ingredients:
* Plastic wrap
* Avocado, sliced
* 2 cans tuna
* 1/4 cup Greek yogurt
* Sriracha, to taste
* Cucumber, sliced
* Nori
* Furikake (seaweed seasoning)
* JalapeƱo, sliced
* Trader Joe’s Chili Onion Crunch
* Soy sauce
Steps:
1. Line a tupperware with plastic wrap
2. Layer sliced avocado on the bottom
3. Mix 2 cans of tuna with 1/4 cup Greek yogurt and sriracha to taste, then add on top
4. Add sliced cucumber
5. Top with nori and furikake
6. Finish with jalapeƱo, Trader Joe’s Chili Onion Crunch, and a drizzle of soy sauce
Fast, delicious, and budget-friendly. Meal prep never looked this good.

After work, I’m not making anything complicated.

This easy taco bowl took less than 15 minutes, kept me full, and required very little effort…exactly what I needed.

Most of it is from Trader Joe’s because I refuse to start chopping vegetables at 6pm.

What I used:
• 1/2 cup brown rice
• 1/2 cup beans
• 3/4 cup ground turkey
• Handful of lettuce
• 1 tbsp guacamole
• Low fat sour cream
• Pico de gallo
• Lime

Seasoning for the turkey:
• 1 tbsp cumin
• 1 tbsp onion powder
• 1 tbsp garlic salt
• 1 tbsp paprika
• 1 tbsp chili powder
