😍Who doesn’t love a healthy dessert that’s good AND good for you??
😇Made with simple ingredients + 7g of fiber & 10g of protein per serving (aka two bites!)
✨Ingredients - Makes 8 bites | 4 servings
For the pumpkin bites
- 3 packets Vanilla Bean Perdi’s
- ½ cup pumpkin purée
- ¼ cup creamy cashew butter Woodstock
- ¼ cup ground flaxseed Bob's Red Mill
- 1 TBSP pure maple syrup Field Day
- 1 tsp pumpkin pie spice Frontier Co-op
- ½ tsp vanilla extract Simply Organic
- Pinch of Celtic Sea Salt®
For the chocolate coating
- ½ cup dark chocolate chips Guittard Chocolate Company
- 1–2 tsp coconut oil Whole Foods Market
- Celtic Sea Salt®
Directions
1. In a medium bowl, combine the pumpkin purée, cashew butter, maple syrup, and vanilla extract. Mix until smooth.
2. Add the Perdi’s, ground flaxseed, pumpkin pie spice, and a pinch of sea salt. Mix until everything is well combined and a thick dough forms.
3. Divide the mixture into 8 equal portions and roll into balls. Place the balls in the freezer for 20 minutes, or until firm.
4. Melt the dark chocolate chips with 1–2 teaspoons coconut oil, stirring until completely smooth and pourable.
5. Line a baking sheet with parchment paper and place a wire cooling rack on top. Arrange the chilled pumpkin bites on the rack.
6. Spoon or slowly pour the melted chocolate over each pumpkin bite, allowing it to naturally run down the sides. The bottoms don’t need to be completely covered.
7. While the chocolate is still wet, sprinkle each bite with a little flaky sea salt.
8. Refrigerate for about 10 min or until the chocolate shell has completely hardened.
9. Enjoy immediately or store the bites in an airtight container in the refrigerator!
