Easy bean and vegetable salad for the weeks when meal prep (and life) do not go according to plan.

Sometimes my good intentions at the grocery store greatly exceed my actual capacity once I get home.

So before everything dies in the crisper drawer, I chop up whatever vegetables need to be used and add:
• Beans
• Sunflower seeds
• The dressing I always make
• Whatever else sounds good

There is no real recipe and I don’t measure s**t. I just keep adding things until it looks and tastes good.

This week I put it over cottage cheese and ate it with crackers. It gives me an easy high-fiber lunch, uses up the random crap in my refrigerator and even my teens will eat it.

Double win.

Eating well doesn’t always require better planning, elaborate meal prep or 37 matching containers. Sometimes you just need one easy way to use what you already have.

Save this easy meal-prep idea for the next time your vegetable drawer starts judging you.

I’ve talked about this a few times, but I’m finally opening it.

I’m putting together a small, cozy group (4-6 women) focused on something most people struggle with:

👉 staying consistent with training and nutrition in real life

Not when everything is perfect.
Not when motivation is high.
But when you’re juggling work, stress, kids, and everything else.

This is for you if you:

- already train (or want to)
- feel like you “know what to do” but can’t stick with it
- are tired of starting over every week

The plan is simple:

- 4 weeks
- 1 live coaching call per week
- real-life support + problem solving
- no extremes, no rigid plans

Just something that actually works and feels sustainable.

I’m keeping this first round small so I can coach closely.

If you want in, comment or message me “I’m in” and I’ll send you the details. ☺️

I’m a dietitian helping active women who feel inconsistent with nutrition, training, and taking care of themselves.

Most of my clients are doing a lot right - but what they’re trying to follow doesn’t actually fit their life, stress, or capacity.

I don’t give cookie-cutter plans.

I help you:
• Understand what’s not working (and why)
• Align your nutrition with your training and real life
• Build a system that’s realistic, flexible, and sustainable

This includes looking at the bigger picture - your schedule, stress, habits, appetite, and what you actually have the bandwidth for.

The goal isn’t perfection.
It’s something that actually works.

I offer 1:1 coaching (insurance options available) and am building a small group program.

My cholesterol spiked after surgery… and no, I’m not freaking out.

Back in January, while I was training consistently, my labs looked solid:
🧬 Total Cholesterol: 173
🧬 LDL: 100
🧬 HDL: 60

Fast forward to April—after 6 weeks off training to recover from surgery—and here’s what changed:
🚨 Total Cholesterol: 246
🚨 LDL: 132
🚨 HDL: 91

Same diet.
Same hormone therapy (1mg estradiol daily).
But way less movement + the inflammation of healing = a temporary shift.

🧠 Here’s what this shows:
➡️ Labs can change a lot in just 3 months.
➡️ Movement matters more than people think.
➡️ Genetics always play a role.
➡️ And no—one abnormal draw doesn’t mean you need meds.

You don’t need to panic over numbers without context. You need to zoom out, look at the full picture, and have a plan.

Fuel smart. Train hard. Know your numbers.

And yes—get your labs checked regularly. Your body is always adapting.

Comment “LABS” if you want help figuring yours out.
