Happy Taco Tuesday! 🌮 ⁣

This is pretty good on just about everything taco related! ⁣

It’s not super spicy, even my kids eat it without complaining. (It’s a miracle!) 😊⁣

Tomatillo Guacamole ⁣

Ingredients:⁣
6 tomatillos, remove husks and rinse⁣
1/4 onion - white, red or yellow works ⁣
2 jalapeños, tops cut off⁣
3 cloves garlic ⁣
Water, to cover veggies ⁣
1 tsp salt ⁣
1 small bunch cilantro ⁣
3 avocados, halved and pitted ⁣
Half a lime juiced (optional) ⁣

Directions:⁣
1. Throw tomatillos, onion, garlic and jalapeños in saucepan. Add enough water to cover. Bring to a boil then simmer until tomatillos turn yellowish-green color. Takes about 5 mins. ⁣

2. Remove veggies from heat, use slotted spoon to remove veggies from pan into blender and stick the lid on. Use a folded kitchen towel on top of the blender to keep lid on and prevent burning yourself. ⁣

3. Blend on low until mixture is puréed. Add salt, cilantro and avocado. If you have a vita mix you don’t need to chop up your cilantro but if you don’t, roughly chop it before you add it back in. taste and adjust salt or add lime if you wish. My tomatillos had a limey (is that a word?) flavor already so I didn’t add any. ⁣

4. Put it in a container and stick it in the fridge until you’re ready to serve.⁣

I remade my famous Buffalo Ranch Roasted Chickpeas recipe in the air fryer!

This recipe is one of the top recipes from my ktfa food blog. It actually landed me on the Rachael Ray Show in 2013! I’ll link my food blog and the show clip in the comments. ⁣⁣⁣⁣

These make a great high-fiber healthy snack! There are so many variations of this recipe, try any of your favorite spice mixtures! You can find several roasted chickpeas recipes on my website. ⁣⁣⁣⁣

Ingredients:⁣⁣⁣⁣
⁣⁣⁣⁣
1 15-oz can chickpeas/garbanzo beans, drained and rinsed ⁣⁣⁣⁣
2 Tbsp Frank's Hot Sauce⁣⁣⁣⁣
1 Tbsp nutritional yeast⁣⁣⁣⁣
1-2 Tbsp dried parsley ⁣⁣⁣⁣
1/2 tsp garlic powder⁣⁣⁣⁣
1/2 tsp onion powder⁣⁣⁣⁣
1/2 tspdried dill⁣⁣⁣⁣
1/4 tsp ground black pepper⁣⁣⁣⁣
⁣⁣⁣⁣
Directions:⁣⁣⁣⁣
⁣⁣⁣⁣
1. Preheat air fryer to 400F.⁣⁣⁣⁣
⁣⁣⁣⁣
2. Combine chickpeas with hot sauce and coat evenly. Add in the nutritional yeast and spices, combine well. ⁣⁣⁣⁣
⁣⁣⁣⁣
3. Dump mixture into air fryer and shake a bit. ⁣⁣⁣⁣

4. Cook for about 10-15 minutes or until slightly browned and crunchy. Shake pan or stir every few minutes throughout the baking process! ⁣⁣⁣⁣

Are you aware of how much fiber you consume? Most people are not. So it’s not surprising that most people are not getting enough fiber... and a lot of people have a hard time 💩 (pun intended!)⁣⁣

When I tell my clients they need to eat between 30-35 g of fiber per day, they are often shocked. “But how in the heck am I supposed to eat that much?” 😳⁣⁣⁣⁣

The plant-based crowd (you lovely people!) have a much easier time getting in the fiber they need but some still struggle.
⁣⁣⁣⁣
Fiber technically falls under the category of a carbohydrate since it contains structures and molecules that fit the description however it acts quite differently in the body. Fiber is the portion of the carbohydrate that cannot be completely broken down by digestive enzymes and therefore passes through the system.⁣⁣⁣
⁣⁣⁣⁣
Let’s explain the two types of fiber - soluble and insoluble fiber. Soluble fiber includes pectins, lactulose, xylose and others. These fibers are not completely broken down by digestive enzymes in the G.I. tract and can be readily fermented by the colon, resulting in short chain fatty acids that can be absorbed. This is not completely broken down by digestive enzymes in the G.I. tract and can be readily fermented by the colon, resulting in short chain fatty acids that can be absorbed and used for energy. (Hence why we track our fiber intake!) This also produces gas. Hence why veggies give you gas. 💨🤭 Soluble fiber also adds bulk to food, creating regular bowel movements while regulating gut transit time.⁣⁣⁣⁣

Insoluble fiber adds significant in bulk to food and is generally not something we can digest. These include cellulose, hemicellulose, xanthan gum, some starches and a bunch of other compounds.⁣⁣⁣⁣

It’s not only keeps you regular but helps improve blood glucose and insulin sensitivity, improves blood lipid levels, lowers cholesterol and helps with weight loss by increasing satiety. ⁣⁣⁣⁣

Other great high-fiber food options include beans, avocados, Chia seeds, lentils, acorn squash, green peas, collard greens, broccoli, oranges and sweet potatoes. ⁣⁣⁣

Here’s my typical post-workout shake recipe! I always add greens, fresh or frozen. Today I’m using fresh kale but I often use frozen spinach. ⁣⁣

*Tip: Make sure to keep your fat intake low around your strength workouts.⁣
⁣⁣
Throw in the blender:⁣⁣
* 16 ozs liquid - sometimes I use unsweetened almond milk and other times I use calorie-free fruit flavored water (Fav!)⁣⁣
* 1 cup frozen berries⁣⁣
* 1 medium frozen banana⁣⁣
* 1 large handful of greens or 1 cup frozen spinach⁣⁣
* 1 scoop protein powder⁣⁣⁣⁣
