Hey all you cool cats and kittens 😸✌🏽,
I got myself a 25 # bag of semolina! Now that’s gonna be a whole lotta pasta! 🤪🙀

Loving this new recipe!! 🤗🥰🤩

Happy Baking 🎉
Lime Pie
132g graham cracker finely ground
60 g unsalted butter
38 g sugar
¼ tsp salt
14oz organic sweetened condensed milk
5 egg yolks room temp
1 lime zested
120 g lime juice
Process first 4 ingredients. Add to a 10 inch pie plate and bake at 325 for 8 min
Wisk in the remaining ingredients and add to pie shell in oven. Bake for 15ish min
Cool in fridge overnight
Pastry Cream
4 egg yolks plus one extra large egg
125 g sugar
25 g cornstarch or arrowroot
¼ tsp salt
236 g cream
236g whole milk
1 Tbs vanilla x
120g butter
Add corn starch to eggs and sugar and salt and whisk.
Heat cream and milk to boil
Pour over egg mixture and whisk
Add mixture to pot and cook over med heat while stirring until thick
Pass through chinois add butter and vanilla x stir until butter is melted and incorporated
Refrigerate overnight
Yogurt Cream
250 g cream
75g yogurt
Whip in mixing bowl till soft peaks
TO ASSEMBLE remove pie from fridge top with half the pastry cream and finish with a layer of yogurt whip
