A typical day for me likely involves cooking, recipe testing, rowing, playing in the gym and outdoors, spending time at the beach with my husband and pup, and continuing to learn and share as much knowledge around food and mindset as I can. The Slater Fam has grown exponentially since we were once a party of 5! Now we're Slater/Reilly - party of FIFTEEN!!! There are SEVEN little cousins running around, ranging from 5 months old to 8 years old! We had a little family reunion and decided to take some pictures since we're all together so rarely now.

6+ weeks later, I’m finally getting around to sharing the arrival of our baby girl! Alice Cecilia Reilly was born on December 18, 2019 at 7 # 1oz, 19 1/2 inches. She was named after two incomparable women who have made a tremendous positive impact in our life and the lives of many others. We are all so in love with this very easy baby who seems to just eat, sleep, and chill. Big brother is completely obsessed with his “little one” as he calls her! In an instant, our world became infinitely more full and beautiful.

Just me over here, hangin’ with mah babies! One has just come to life (NEW MAMA!) and the other will be making her debut in 8 short weeks!

Real talk: I’ve been pretty silent here and on my website for the last year. Blogging and posting to social media for the sake of posting to social media was not my thing. It felt forced. It was not working for my life as a work-from-home-mama to a very busy toddler. So, what HAVE I been working on over the last year?

Well, besides growing another human and enjoying the wild little 2 1/2 year old one I already made, I’ve been working with my fellow RD and parent to create a product (and eventually a whole product line!) to serve the needs of all parents - aspiring, soon-to-be, and current. Our first product is for new mothers -to make the transition into parenthood a little less frazzled and depleting.

Today! This is happening today!! Headed to Grand Rapids for USRowing Masters Nationals!! 7 races over 4 days. I'll be posting updates in my stories, or you can also follow ! Woo hoo!!

This time next week, we will be in Grand Rapids, MI for USRowings regatta! My club, ZLAC, is attending as a small group of 6 (4 rowers, 2 coxswains) but we are coming STRONG and Ready!
Jeanne and I will be rowing in the Women’s Open A Pair (2-) event next Friday to defend our trophy 🏆🤞🏽 We are also entering 3 races as a ZLAC 4+ (the plus is for a coxswain) and 3 additional composite races with other crews from across the country!

BIG shout out to Frances & Pilar taking on the Women’s Open Lightweight A Double (2x) 💪🏽 💪🏽

I’m not into having to eliminate so-called “unhealthy” foods from your diet to reach your health goals. There’s no such thing as a “do-not-eat” list. Instead, find ways to work in any food in a way that makes sense for you & your goals. Get creative & find healthier versions of your favorite dishes! With a few ingredient swaps, anything is possible!
One of my favorite ingredient swaps is using bean pasta (like Banza ) instead of traditional pasta. It is SO filling because it’s loaded with protein and fiber!
Try this easy weeknight pasta recipe I came up with that only requires ONE pot and 30 minutes from start to finish!
Creamy Shrimp Pasta Bake
Serves 4 (double and bake in a 9x 13 for 8 servings!):
-1 pound raw shrimp, peeled, deveined, (thawed if using frozen)
-1 pound chickpea pasta
-1 can diced tomatoes
-2 cups (entire recipe) quick & healthy alfredo sauce (recipe below)
-1 Tbsp fresh parsley, chopped (for garnish)
-1/4 cup fresh grated Parmesan cheese

Quick & Healthy Alfredo Sauce:
-1 Tbsp Olive oil
-2 cloves garlic, minced
-1 cups milk
-1/2 cup broth (chicken or veggie)
-2 Tbsp flour
-1/4 tsp each salt & pepper
-1/2 cup grated parmesan cheese
Directions:
1. Preheat oven to 400F. In a large, oven-safe saucepan, boil 8 cups water. Cook pasta to al dente (about 7 mins). Drain and rinse pasta immediately. Don’t skip the rinsing step! Set cooked pasta aside.
2. In the same sauce pan you used for the pasta, heat olive oil & sauté garlic over medium heat for 1 min, until fragrant. Add milk & broth, heat to a simmer. Next, add 1 Tbsp flour at a time, whisking to mix in any clumps. Add salt, pepper, & cheese, whisking until smooth. Reduce heat and let simmer for 5 mins, whisking occasionally. Remove from heat.
3. Add shrimp and tomatoes to saucepan and fold in to Alfredo until all shrimp is well coated. Bake in preheated oven for 10 mins. Remove from oven, and very gently fold in cooked pasta until all pasta is well coated in sauce. Top mixture with shredded Parmesan and return to oven for 5 minutes, or until shrimp is pink and cooked through. Top with fresh parsley & serve!
