REMOVING THE BREAD IS NOT ENOUGH.

To the restaurants that strive to provide gluten free options, removing the bread is not enough to make a meal celiac safe. Cross contact in the kitchen from shared fryers, cooking utensils, counters, and cookware will cause damage to the intestines of a person with celiac disease making safe food preparation vital to preparing a celiac safe meal.

Very interesting perspective on celiac disease.

We are not gluten-free because it is popular. We are not gluten-free because for some it is a fad. We are gluten-free for my children's lives. Without treatment for celiac, they can develop so many other issues, including cancer. The list is long and scary.

So there is no other choice for our family. Our daughters health is the most important. Not a fad. Not a diet. Not because it's popular.

If my daughters ingest any type of gluten, their immune system creates antibodies that attack, damage or destroy the villi lining the small intestine. Their body then cannot properly absorb basic nutrients – proteins, carbohydrates, fats, vitamins, minerals and, in some cases, water and bile salts. Their body sees gluten as a poison and starts attacking.

Both of their intestines were flat and did not have the normal finger-like villi. It was positive just by sight (but of course needed the biopsy to come back to confirm).

Celiac disease is NOT a fad diet. Gluten free IS MANDATORY for many.

1/64th of a teaspoon of gluten is all it takes to cause intestinal damage to someone that has celiac disease. That is the size of a little breadcrumb. A tiny little breadcrumb. That is all it takes for someone to get sick that has celiac disease. Gluten is in EVERYTHING. Food, cosmetics, shampoos, lotions, toothpastes, art supplies...and the list goes on. "Not eating gluten" is only one aspect of celiac. However...it goes much deeper than that. Even things labeled as gluten-free, aren't always gluten-free. If they are manufactured in a facility that also processes wheat, rye, or barley… a celiac cannot eat it. If they contain oats...they may also be contaminated (learned the hard way with that one!). So… It is so much more than just eating "gluten-free". So be patient with the celiac. Be patient when they must talk to the wait staff before ordering. Be patient when someone says they cannot go out to eat at a certain restaurant. Be patient and understanding if they cannot eat something you lovingly prepared. Being "different" is not easy and I can tell you...ever celiac person I know sure wishes they didn't have it. :(

Celiac disease awareness month. Did you know there are over 300 symptoms of celiac disease? Neither one of my daughters presented with the typical symptoms. Many times Chron's Disease and IBS are misdiagnosed and it's actually celiac the patient is suffering from. If you have symptoms you cannot get a diagnosis for...a celiac blood test may be able to answers some questions you have!

Make sure to ALWAYS read ingredients! While Annie's does make some gluten free products...these ARE NOT gluten free (even though they are on the gluten-free shelf). A family member trying to be nice and make some cookies… Or someone newly diagnosed… May not realize these have gluten and will grab them.

Most boxes will say gluten free if they are but the store may stock gluten items in the wrong spot! Always be vigilant!

When we had to switch to gluten free I was shocked to realize soy sauce has gluten in it. But...I must say...this soy sauce is THE BEST I've ever had. It's 100% soy...whereas the others usually aren't! Yummmmmm!
