To Sear or Not to Sear Before Sous Vide? 🔥
It’s one of the most common questions we hear in sous vide cooking:
Should you sear before cooking, after cooking, or both?
The purpose of searing is simple: create a beautiful crust through the Maillard reaction—the complex browning process that develops deep flavors, appealing color, and irresistible texture. The key is achieving that crust without overcooking the product.
While a pre-sear can add flavor, many chefs prefer a post-sous vide sear because it allows for maximum crust development while maintaining the precise doneness achieved during the sous vide process.
But the real answer is: it depends on the product, the desired outcome, and the technique.

🌽 The Corn You Never Taste Might Be the Most Flavorful Part

Most people toss the corn husks and silk without a second thought. But did you know that every strand of corn silk is connected to a single kernel, carrying the essence of the ear's development?

We've been exploring what happens when these often-discarded parts are given the same respect as the kernels themselves.

Using sous vide extraction, we gently capture the delicate, grassy-sweet aromatics locked inside the husks and silk. Then, through cryoconcentration, we remove water naturally by freezing and separating ice crystals, intensifying the flavors without heat or evaporation.

The result?

A concentrated expression of corn that's beyond sweet. Notes of fresh-cut fields, green corn, toasted cereal, and the aroma of a summer harvest, all extracted from parts of the plant that typically never reach the plate.

It's a reminder that innovation isn't always about adding more ingredients. Sometimes it's about discovering the hidden potential in what's already there.
