Beets are one of my favorite foods to recommend for liver and gallbladder support. They contain a compound called betaine that helps the liver process and eliminate toxins more efficiently. They also support bile flow-which helps your gall bladder break down the fats you eat. And here’s the thing most people don’t connect: when your liver is sluggish from chronic stress, your digestion suffers. Bloating after meals, nausea with fatty foods, that heavy feeling that won’t quit, pain in the upper right abdomen or in the right shoulder blade are all signs your gallbladder and liver are often in the middle of it. Beets won’t fix everything, but adding them consistently is one of the simplest ways you can support that system. I prefer to roast my beets in the instant pot with the skins on. They slip right off afterward, add a little butter and salt and you have a delish side dish. Any leftover juice in the bottom of the kettle can be used to make your rhubarb lemonade a deeper red color!
