RECIPE POST- The thing Piper misses most at college (aside from her cat) is home cooked food. I’m sure the folks in the dining halls do their best, but it’s hard to duplicate homemade food when you cook on such a large scale.

I’ve been in search of recipes which use basic ingredients, can be scaled to one serving and are made in a microwave. This Dorm Room Apple Crisp is the first one I’ve mastered.

SAVE this recipe and give it a try yourself; or, TAG a college student who needs to see it.

DORM ROOM APPLE CRISP
1 apple peeled, cored and cut into 1” cubes
2 TBS sugar
1 tsp lemon juice
Pinch cinnamon
For topping:
1 TBS flour
1 1/2 tsp sugar
2 tsp rolled oats
Pinch of salt
1/2 TBS butter

Make filling by mixing the apples, sugar, lemon juice and cinnamon in a bowl or large mug. Microwave for 3-4 minutes, stirring every 30-45 seconds, until apples soften. Set aside to cool.

Make the topping by mixing the flour, sugar, oats and salt in a bowl or on a plate. Then rub the butter into the mixture with your fingers until coarse crumbs develop. Microwave for 2-3 minutes, stirring every 30-45 seconds until the crumbs are crisp.
Sprinkle the topping over the apples for a little extra pizazz add a dollop of ice or whipped cream.

So this happened this weekend! Strawberry Shortcake in all its juicy, sweet, crumbly glory. This time of year absolutely rocks!
