Nutrition and exercise go hand in hand when it comes to wellness, quality of life, and longevity. You can't have true good health without both being physically active and incorporating healthy foods. I have a very active lifestyle, and know firsthand how to use the power of good nutrition to stay energized. It just doesn't work. It was through small changes in my own eating and moving towards a whole, real foods based diet that I have been able to reach my own weight and health goals. 🥦Need something delicious to make this week? Sticky Chicken & Rice is it!🍚

🥰It is one of my girls’ favorites that they request often. In fact after my youngest moved out for college it was the first thing she requested for me to make.

A little sweet, a little salty, some Asian flavors happening. Delicious! 10/10 recommend!

Sticky Chicken & Rice

Servings: 4

INGREDIENTS
2 cups uncooked rice
3 large chicken breasts
2 tbsp olive oil
1 tsp salt
1/2 tsp pepper
1 tsp chili powder
1 tsp smoked paprika
1 tsp onion powder
1 tsp oregano

Sticky Sauce:
1/4 cup soy sauce
1/4 cup honey
2 Tablespoons rice vinegar
2 cloves garlic, minced
1 tsp sesame oil
1/2 tsp ground ginger
1 tsp cornstarch mixed with 1 tbsp water to make a slurry

Spicy mayo:
1/2 cup mayo
1-2 tsp sriracha (depending on how spicy you like it)
1 tbsp water
sesame seeds for topping

STEPS
1) Cook rice according to package.

2) Cut chicken up into small bitesized pieces.

3) Toss chicken with oil and all spices. Heat a drizzle of olive oil in sauté pan or cast iron skillet on medium-high heat. Brown chicken on both sides.

4) While chicken is cooking combine soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil.

5) Remove chicken from pan to plate.

6) Add sauce to pan. Bring to a boil. Once boiling, add cornstarch slurry. Let boil 4-5 minutes or until sauce has thickened greatly. Add chicken to sauce. Let simmer on low for 3-5 minutes

7) Mix together spicy mayo ingredients

8) Prepare bowls by layering rice, broccoli and chicken. Drizzle spicy mayo on top. Top with sesame seeds.

💁🏼‍♀️How to make roasted broccoli: Season broccoli florets with olive oil and a little salt and pepper. Place in sheet pan. Roast in 425 degree oven for about 10 minutes. Stirring halfway through.

Garden Fresh Pasta Salad…Recipe 👇🏼

I love having a pasta salad on hand during the Summer. It is a complete meal in a bowl. This one is so satisfying, crisp, flavorful, and delicious!

They are great to have for lunches during the week or to pair alongside chicken or salmon for dinner.

I added a couple of chopped up slices of oven roasted deli turkey to my bowl I had for lunch today to up the protein and satisfaction factor. You could also add garbanzo beans to this too if you like them.

🍅 Garden Fresh Pasta Salad 🫑

Ingredients
* 1 pound dried pasta like rotini
* 1 cup chopped bell pepper (1 medium)
* 1 cup thinly sliced zucchini (½ medium)
* 1 cup grape tomatoes, cut in half
* ⅓ cup chopped red onion
* ¼ cup sliced pepperoncini or banana peppers (optional)
* 1/2 cup grated Parmesan or other hard cheese
* 8 ounce package fresh mozzarella pearls
* ⅓ cup fresh Italian flat-leaf parsley, rinsed and chopped

Dressing
* ⅓ cup red wine vinegar
* Juice of half a lemon
* 2 teaspoons honey
* 1 teaspoon fine sea salt, plus more to taste
* ½ teaspoon freshly ground black pepper
* ½ teaspoon dried oregano
* 2 to 3 tablespoons juice from pepperoncini jar (optional)
* ½ cup extra-virgin olive oil

Directions
1. Bring a large pot of salted water to a boil. Add the pasta and cook until tender, 9-10 minutes (check the package for recommended cook time). Drain and rinse well under cold water.

2. While the pasta cooks, make the dressing in the bottom of a large bowl. Whisk together the red wine vinegar, lemon juice, honey, salt, pepper, oregano, and pepperoncini juice (if using), then whisk in the olive oil until blended.

3. Add the drained and rinsed pasta to the dressing and mix well.

4. Stir in the bell pepper, zucchini, tomatoes, red onion, pepperoncini (if using), parmesan, mozzarella, and herbs. Taste for seasoning and adjust with salt and pepper as needed.

5. Serve immediately, or for the best flavor, cover and refrigerate for at least ½ hour. It gets better as it sits. Store in refrigerator for up to 5 days.

I love that the conversation around menopause has gotten louder, but sometimes louder conversation comes with overwhelm and confusion.

1️⃣ Diets fail for most—short-term weight loss followed by long-term weight regain is the norm - even with GLP1s.

2️⃣ Health is much more complex than just weight.

3️⃣ The scale/BMI is not a very useful tool for assessing health.

4️⃣ Health-supporting and life-enhancing self-care patterns instead of worrying about the scale are far more beneficial.

5️⃣ Researchers have found that restriction and deprivation typically lead to overeating.

6️⃣ Many people find that when they learn how to slow down and become more mindful of their body’s cues throughout the day, they are able to find a more satisfying and pleasurable eating pattern that aligns with their inner body wisdom. This is a very different approach than counting calories or portion control.

7️⃣ Engaging in exercise for the sole purpose of weight loss often makes movement less enjoyable. When weight loss is no longer the sole focus, people are able to discover pleasurable forms of movement and notice other benefits, such as reduced stress, anxiety, and improved energy throughout the day.

🥳 Grateful to have celebrated a birthday yesterday. 🧁

It was a chill but great weekend celebrating with some of my favorite people. 

I had beers with friends, played tennis, had a delicious dinner with some of my favorite people, did a phenomenal hot yoga flow class with one of my favorite teachers and a good friend to kick off the actual day, received some very sweet texts and calls, went to a movie in an actual movie theatre, and me and my favorite man and human made my very favorite meal…Creamy Spinach and Artichoke Salmon. 

Pure goodness full of the things I love doing and people that I love.

Looking forward to the year ahead with lots of hope for good things to come.
