Garlic Butter Chicken of the Woods

Serves: 2–4

Ingredients

* 1 pound young chicken of the woods mushrooms, cleaned and cut into bite-sized pieces
* 2 tablespoons butter
* 1 tablespoon olive oil
* 3 cloves garlic, minced
* 1 teaspoon fresh thyme (or ½ teaspoon dried)
* Salt and freshly ground black pepper
* 1 tablespoon lemon juice
* 2 tablespoons chopped fresh parsley
* Optional: grated Parmesan or a pinch of red pepper flakes

Instructions

1. Gently brush off dirt and trim away any tough parts. Avoid soaking the mushrooms in water.
2. Heat the olive oil in a large skillet over medium-high heat.
3. Add the mushrooms in a single layer. Cook 5–7 minutes without stirring too much so they brown.
4. Stir and continue cooking another 5–7 minutes until they’re tender and any released moisture has evaporated.
5. Lower the heat to medium. Add the butter, garlic, and thyme. Cook 1–2 minutes until fragrant.
6. Season with salt and pepper.
7. Remove from the heat and stir in the lemon juice and parsley.
8. Top with Parmesan or red pepper flakes if desired.

Serving ideas

* Spoon over buttered toast or crusty bread.
* Toss with pasta and extra Parmesan.
* Serve alongside grilled steak or roasted chicken.
* Fold into an omelet or scrambled eggs.
* Add to risotto or creamy polenta.
