No-Bake Peanut Butter Oat Cups

Ingredients:
1 cup peanut butter (smooth or crunchy)
ΒΌ cup maple syrup
1 teaspoon vanilla extract
2 cups old-fashioned rolled oats
ΒΌ cup mini chocolate chips (optional)

Instructions:
Prepare the Mixture
In a medium bowl, combine peanut butter, honey or maple syrup, and vanilla extract. Stir until smooth and well mixed.
Time: 5 minutes
Add Oats
Add the rolled oats into the peanut butter mixture. Stir well to fully coat the oats.
Time: 2 minutes
Form the Cups
Line a muffin tin with paper liners. Scoop about 2 tablespoons of the mixture into each liner and press down to form a compact cup shape. Sprinkle mini chocolate chips on top if desired.
Time: 5 minutes
Chill
Place the muffin tin in the refrigerator for 30 to 60 minutes, or until the cups are firm and set.
Time: 30 to 60 minutes
Serve
Once chilled, remove the cups from the muffin tin and serve.
Time: 1 minute

Prep Time: 10 minutes
Chilling Time: 30 to 60 minutes
Total Time: 40 to 70 minutes
Calories: Approximately 150 kcal per cup
Servings: 12 cup

Unstuffed cabbage roll soup

1 diced onion
2 minced garlic cloves
4 cups vegetable broth
3- 8 ounce cans tomato sauce
3 Tablespoons brown sugar
1 bay leaf
1/2 cup brown rice
2 large carrots cut into bite size pieces
4 cups chopped cabbage
1 cup chopped soy curls (optional)
In a large stockpot water sautΓ© the onions and garlic. Add the broth, tomato sauce, brown sugar, and bay leaf and bring to a boil. Turn down to a simmer. Rinse the rice and add to the soup. Deduct 10 minutes from the cooking time for the rice and set your timer.
When the rice is almost done, add the carrots, cabbage, and soy curls. Simmer for 10 minutes.
This soup is best served the next day as the soy curls will take on a chewier, meatier texture overnight in the refrigerator but I had to try a bowl right off the stove. Delicious.

A tangy, vibrant juice made from tart cherries β€” packed with antioxidants, known to support sleep and reduce inflammation naturally.

Ingredients (Makes 2 glasses):
1 cup tart cherries (frozen or fresh, pitted)

1 cup cold water or coconut water

1–2 tsp honey or maple syrup (optional, to balance tartness)

Juice of Β½ lemon (optional, for added brightness)

Ice cubes for serving

Instructions:
Blend:

In a blender, combine the cherries and water.

Add honey and lemon juice if using.

Blend until smooth.

Strain (optional):

For a smoother texture, strain the juice through a fine mesh sieve.

Serve:

Pour into glasses over ice. Garnish with a cherry or mint leaf.

Ingredients:

1/2 cup PB2 powdered peanut butter
1/4 cup water (to mix with PB2)
1/4 cup maple syrup or honey
2 tbsp unsweetened cocoa powder
1/4 cup unsweetened plant milk (or milk of choice)
1 tsp vanilla extract
1 1/2 cups rolled oats
Pinch of salt

Directions:

1. In a mixing bowl, combine PB2 with water and stir until smooth and creamy. Adjust the water if needed for a thick peanut butter-like consistency.
2. Add maple syrup, cocoa powder, almond milk, vanilla extract, and a pinch of salt. Mix well to combine.
3. Stir in the oats until they’re fully coated and the mixture is uniform.
4. Scoop spoonfuls of the mixture onto a parchment-lined baking sheet and flatten slightly with the back of a spoon.
5. Chill in the refrigerator for at least 30 minutes to firm up.
