My name is Jennifer.. I am 46 years old and I was recently diagnosed with MTHFR Gene Disorder and many food allergies and sensitivities. It has been quite an adventure figuring out what I can and can not eat... but by changing my diet I have lost over 35 lbs, kept it off for over three years now and all of my health conditions are resolved!! One Pot Unstuffed Cabbage Rolls... All the same yumminess but so much easier and faster than actually making the rolls ... who has time for that!? And they are naturally gluten free, dairy free and low carb πŸ‘πŸ‘πŸ‘.
β€’1 pound ground beef, turkey or pork.
β€’1 head of cabbage, chopped.
β€’1/2 cup chopped green onion.
β€’1 T olive oil.
β€’14.5 oz. can sauerkraut.
β€’14.5 oz. can diced tomatoes.
β€’6 oz. can tomato paste.
β€’salt and pepper to taste.
(Use organic ingredients as much as possible!)
Heat olive oil on med/high heat in a very large skillet or pot. Add ground meat and onions and cook through. Stir in sauerkraut, diced tomatoes and tomato paste. Stir in cabbage, cover and simmer until cabbage is tender and cooked through, about 15-20 minutes, stirring occasionally. (This can easily be made in a crockpot as well!)

Easy Low Carb Pizza Stuffed Portabella Mushrooms.

β€’6-8 whole Portabella Mushroom caps.
β€’1 small jar pizza or marinara sauce.
β€’1 bag shredded mozzarella cheese... for non dairy use Daiya brand.
β€’Any combo of your favorite pizza toppings: pepperoni, sausage, olives, onion, pepper, etc.
Preheat oven to 375 degrees. Wash mushrooms and pat dry. Remove stems. Place caps upside down in a large baking pan greased with olive oil. Fill caps with about 2-3 tablespoons of sauce, then sprinkle on a generous amount of cheese. Last add your toppings. Bake for 20 minutes. β€οΈπŸ•πŸ„β€οΈ.

Came up to Wrightwood for a snow hike and dinner. We always eat here at the Grizzly Cafe when we come up... This place has really great food and I love that they always accommodate my gluten and dairy free requests with no problem! Are you ready for some cinnamon and sugar goodness?! YES! SNICKERDOODLE Perfection!! And YES, they are gluten free, grain free, and dairy free βœ…βœ…βœ…. Recipe πŸ‘‡
β€’1/4 cup ghee.
β€’1/4 cup organic palm shortening.
β€’1 cup sugar.
β€’1/4 tsp cream of tartar.
β€’1/4 tsp baking soda.
β€’1 egg.
β€’1/2 tsp vanilla.
β€’1 cup almond flour.
β€’1/2 cup arrowroot flour.
β€’1/4 cup tapioca flour.
β€’1/4 cup coconut flour.
β€’3 T. sugar.
β€’1 tsp cinnamon.
(Use organic ingredients as much as possible!)
Preheat oven to 375 degrees. In a small/medium bowl stir together the almond, arrowroot, tapioca and coconut flours until combined and set aside. In a medium/large bowl beat ghee and shortening until well combined and smooth. Beat in one cup of sugar, cream of tartar, and baking soda. Then beat in egg and vanilla. And lastly, beat in the flour mixture until just combined. Refrigerate dough for 10-15 minutes. Mix the 3 tablespoons of sugar and cinnamon in a small bowl. Using a 1 inch scoop or a tablespoon, scoop out dough and roll in the cinnamon/sugar mixture until coated. Put on cookie sheets and bake for 10 minutes. Leave cookies on the pan after removing from oven for about 5 minutes so they firm up enough to transfer to parchment paper or a cooling wrack. Enjoy!!

Dairy Free Cream of Mushroom Soup πŸ„.
β€’16 oz baby bella mushrooms, chopped.
β€’1 cup green onion, chopped.
β€’2 cloves of garlic, minced.
β€’2 T. bacon fat.
β€’13.5 oz. can full fat coconut milk.
β€’4 cups chicken broth or bone broth.
β€’2 tsp. Himalayan pink salt or sea salt.
β€’1/4 tsp. pepper.
Heat bacon fat in a med-large sauce pan. Add mushrooms, onion and garlic. SautΓ© for about 5 minutes or until mushrooms are cooked and tender. Add remaining ingredients and simmer for 15-20 minutes. Garish with some fresh thyme if desired.

Thanksgiving Leftover Stuffing Eggs Benedict! Just add an egg or two to your left over stuffing, form into patties and fry them up in a skillet. Top the cooked patty with any breakfast meat (bacon, sausage, ham or even your leftover turkey!), a sunny side up or poached egg and hollandaise sauce! I’ve been craving cranberries, so when I saw this recipe for Cranberry Protein Balls from yesterday I was excited! I knew I had all of the ingredients, yay! They were really easy to make, only took a few minutes and are super yummy! Reminds me of a Larabar, but I don’t think they come in cranberry, right? Bacon and Rosemary Roasted Brussels Sprouts πŸ’š My favorite Brussels Sprouts recipe of all time, and the most perfect side dish for holiday meals!
β€’2 lbs fresh Brussels sprouts, cut into quarters.
β€’1 lb uncured bacon, cut into bite sized pieces & cooked until crispy.
β€’1 T. minced fresh rosemary.
β€’1/2 tsp. Himalayan pink salt.
β€’1/4 tsp pepper.
β€’ 2 T. Oil of choice... bacon grease, olive oil, avocado oil, ghee.
(Use organic ingredients as much as possible!)
Preheat oven to 400 degrees. Combine all prepared ingredients in a large baking dish. Bake for 30 minutes, stirring once half way through.
