February 2012 Rick and I watched a documentary called "Forks over Knives" , that day our lives changed forever! Rick immediately started a whole food plant based diet.....I (of course) dragged my feet a little (just a week)...but after the Engine 2 Sweet Potato Lasagne (Thanks for the sample Ray LeTelllier) we felt like this was going to be the way for us to have a long, happy, healthy, life together!!

It has been WAY too long since out last post!! Dinner tonight was Fridge Pot Luck. We had leftover broccolini, mushrooms and yellow zucchini so we cooked up brown rice and teriyaki tofu for a fabulous dinner!!
