πŸ“ Ingredients
1.5 lbs top sirloin or New York strip steak, cut into 1-inch cubes

1 lb baby gold potatoes, halved or quartered

3 tbsp butter (divided)

2 tbsp olive oil (divided)

5 cloves garlic, minced

1 tsp fresh rosemary, finely chopped (plus whole sprigs for garnish)

1 tsp fresh thyme leaves

Salt and fresh cracked black pepper to taste

Fresh chopped parsley for garnish

πŸ‘©β€πŸ³ Instructions
Par-cook the potatoes: Place the halved baby potatoes in a microwave-safe bowl with a splash of water. Cover and microwave for 4–5 minutes until slightly tender. Drain well.

Crisp the potatoes: Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the potatoes and cook for 6–8 minutes, stirring occasionally, until they turn deeply golden brown and crispy. Season with salt, pepper, and half of the rosemary. Remove from the skillet and set aside.

Sear the steak: Turn the skillet heat up to high. Add the remaining olive oil. Ensure the steak cubes are completely dry, season them generously with salt and pepper, and add them to the hot skillet in a single layer. Sear without moving for 2 minutes to get a beautiful crust, then flip and cook for 2 more minutes.

Toss in garlic butter: Lower the heat to medium. Add the remaining 2 tablespoons of butter, minced garlic, thyme, and the rest of the rosemary. Toss the steak cubes in the melting garlic butter for 1 minute. Add the crispy potatoes back into the pan, toss everything together, garnish with fresh parsley and rosemary sprigs, and serve immediately!

πŸ“ Ingredients
2 lbs beef chuck roast, cut into 1.5-inch cubes

4 carrots, cut into thick chunks

8 oz whole cremini mushrooms, halved

1 cup whole pearl onions, peeled

3 cloves garlic, minced

1 cup dry red wine (or extra beef broth)

2 cups beef bone broth

2 tbsp tomato paste

2 tbsp flour (for thickening)

2 tbsp olive oil

Fresh thyme and parsley

πŸ‘©β€πŸ³ Instructions
Brown the beef: Toss the beef cubes with salt, pepper, and flour. Heat olive oil in a skillet over high heat and sear the beef until a dark crust forms on all sides. Transfer to the slow cooker.

Deglaze the pan: Pour the red wine into the hot skillet, scraping up the flavorful bits. Let it bubble for 2 minutes, then pour it over the beef.

Fill the slow cooker: Add the carrots, mushrooms, pearl onions, minced garlic, beef broth, tomato paste, and fresh thyme to the pot. Stir gently to combine.

Slow cook: Cover and cook on LOW for 7–8 hours (or HIGH for 4 hours) until the beef is incredibly tender and falls apart with a fork. Discard thyme stems and garnish with fresh parsley.
