π Ingredients
1.5 lbs top sirloin or New York strip steak, cut into 1-inch cubes
1 lb baby gold potatoes, halved or quartered
3 tbsp butter (divided)
2 tbsp olive oil (divided)
5 cloves garlic, minced
1 tsp fresh rosemary, finely chopped (plus whole sprigs for garnish)
1 tsp fresh thyme leaves
Salt and fresh cracked black pepper to taste
Fresh chopped parsley for garnish

Par-cook the potatoes: Place the halved baby potatoes in a microwave-safe bowl with a splash of water. Cover and microwave for 4β5 minutes until slightly tender. Drain well.
Crisp the potatoes: Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the potatoes and cook for 6β8 minutes, stirring occasionally, until they turn deeply golden brown and crispy. Season with salt, pepper, and half of the rosemary. Remove from the skillet and set aside.
Sear the steak: Turn the skillet heat up to high. Add the remaining olive oil. Ensure the steak cubes are completely dry, season them generously with salt and pepper, and add them to the hot skillet in a single layer. Sear without moving for 2 minutes to get a beautiful crust, then flip and cook for 2 more minutes.
Toss in garlic butter: Lower the heat to medium. Add the remaining 2 tablespoons of butter, minced garlic, thyme, and the rest of the rosemary. Toss the steak cubes in the melting garlic butter for 1 minute. Add the crispy potatoes back into the pan, toss everything together, garnish with fresh parsley and rosemary sprigs, and serve immediately!
