Slow Cooker Sweet & Sour Chicken
Ingredients
The Base:
2 lbs Chicken thighs (boneless, skinless work best for that juicy, pull-apart texture)
1 cup Pineapple chunks (fresh or canned, drained)
1 Red bell pepper, chopped into bite-sized pieces
1 Green bell pepper, chopped into bite-sized pieces
The Sticky Sweet & Sour Sauce:
½ cup Honey or brown sugar
⅓ cup Apple cider vinegar (or white vinegar)
¼ cup Ketchup
2 tbsp Soy sauce
3 cloves Garlic, minced
1 tbsp Fresh ginger, minced (or 1 tsp ground ginger)
1 tsp Red pepper flakes (optional, for a little kick)
1 tbsp Cornstarch + 1 tbsp Water (mixed into a slurry, for thickening at the end)

Layer the Base: Place the chicken thighs in an even layer at the bottom of your slow cooker. Arrange the chopped red and green bell peppers, along with the pineapple chunks, evenly over and around the chicken.
Mix the Sauce: In a medium bowl, whisk together the honey (or brown sugar), vinegar, ketchup, soy sauce, minced garlic, ginger, and red pepper flakes until well combined.
Pour and Cook: Pour the sauce evenly over the chicken, peppers, and pineapples, ensuring everything gets a little bit coated. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the chicken is completely tender and easily flakes with a fork.
Thicken the Sauce: About 20 minutes before serving, whisk your cornstarch and water together in a small cup to create a smooth slurry. Stir this mixture gently into the liquid in the slow cooker. Cover and cook on high for the remaining 15–20 minutes until the sauce bubbles and transforms into a gorgeous, glossy glaze.
