I decided on the the name Genesis Apothecary because the definition of Genesis is: beginning, origin, or beginning, and an apothecary is an old term for pharmacy. We never have a shortage of seasonings and spices here...and we will likely NEVER deplete our store of hot sauces!

We are constantly experimenting...and this latest small batch is absolutely, hands down, delicious! Introducing Merlin's Rhuberry Revenge! I know it sounds toxic, but it's got a fantastic blend of sweetness, tartness, and heat for a magical concoction that would be an addition to your next imaginative recipe.
I added blueberries, raw honey, garlic, habanero pepper and home made apple cider vinegar to a fermented rhubarb and ginger base for a sweet heat that's sure to get the taste buds' attention! It doesn't hurt that it's so pretty either!

We will be in Birnamwood for Polka Days this Saturday...stop by the booth. I'll make sure to have a few sauces available for purchase along with our other more popular items!

On the homestead today:

This is such a yummy treat... AND it's good for you!

A look at the finished fermented rhubarb. Made with rhubarb, water, a bit of sugar, and ginger. Fermentation induces carbonation. The majority of the sugar is "eaten" by the natural yeast creating a natural gut balancing probiotic in the process. I like au naturel, which is a bit tart, but a small bit of simple syrup could be added for sweetness.

Countertop fermentation is a simple, hands-off method that uses naturally occurring bacteria to preserve and transform fresh produce. By submerging fruits or vegetables in a sweet or salty brine or their own juices, you create an environment where beneficial bacteria thrive while harmful bacteria are blocked out.

Why it works:
Good Bacteria (Lactobacillus): These beneficial microbes, which naturally live on the produce, consume the natural sugars in the food.

Lactic Acid: As the bacteria eat the sugars, they create lactic acid. This acid acts as a natural preservative, gives the food a tangy flavor, and creates an environment where harmful, spoilage-causing bacteria cannot survive.

I wholeheartedly endorse this process if you're interested in balancing a good gut microbiome...something all of us can benefit from!

It's that time of year again! Not exactly for festive cheer and snowflakes, but for sniffles and nasal congestion! 🤧

I've got a tiny stash of herbal tea that might just save the day. Bless You Brew is a special mix of nettle, spearmint, hibiscus, and yarrow flower, packed with antihistamine, anti-inflammatory, and antioxidant powers.

Just steep 1-2 tablespoons in hot water for 10-15 minutes, add 1-2 teaspoons of raw local honey for an immune boost, and drink 1-2 cups 2-3 times a week to outsmart those pesky allergies.

On the homestead today...

My wonderful hubby got humongous containers and planted fennel in one (I didn't know when I bought it that it does not play nice with other garden plants and messes up the soil due to its chemical compounds), and Japanese mustard leaf and lettuce in the other.

I pulled w**ds, planted poppies, spotted bee balm, and oregano, gave the comfrey it's first cut of the season for a nutrient rich garden "tea", picked some anise hyssop and catnip to dry, and packaged the dehydrated venison dog food topper.

Now hubs is making rhubarb "juice", and he helped me bottle fermented rhubarb "soda", and I decided to make more right away, so we'll have more in another week or so! Fermenting allows foods to process yeast and suger, producing a self carbonating probiotic packed drink, YUMmmm...😋

On the homestead, the second harvest of stinging nettle has been successfully dried and prepared for use. It's a beautiful day, and after completing the lawn mowing, I'm indulging in a revitalizing glass of hibiscus, nettle, and spearmint tea!

While stinging nettle's stems and leaves are adorned with irritating barbs, proper processing, drying, freeze-drying, or cooking eliminates the risk, making it safe for consumption. Studies have linked stinging nettle to various potential health benefits.

The following are six evidence-based benefits of stinging nettle:

This herb is a rich source of vitamins, minerals, fatty acids, amino acids, polyphenols, and pigments that double as powerful antioxidants in the body.

Stinging nettle's anti-inflammatory properties may aid in managing conditions like arthritis.

On the homestead today...and yesterday.

Ohh... it's that season again! The one that makes me giddy...the one that is a solid reminder of my faith...the growing season! Where I'm reminded most that there is a cycle to life...some would refer to hunting season, but for me it's about the birth! New life, and old life renewed.

The past couple days I've been getting some much needed plant "therapy". That entails a number of different varieties of plants in a number of different settings resulting in the most effective therapeutic response! I've provided some examples below:

Appendix A is from a hike... observing local life burst from the earth.

Appendix B is plants that I'm going to try to sustain and nourish to feed my family.

Exhibit C is the result of chemistry, and culinary craft resulting in a calmer more relaxed demeanor.

It's somewhat telling which exhibit (A, B, or C) the majority of my pictures are on. Some deep thoughts happening here on the homestead!

Today on the homestead...

We haven't purchased mayonnaise in years now, and don't even get me started on what I think of Miracle Whip!🤮

Today I made a double batch...and it will sit out on the counter to ferment until bedtime. I used a bit of the brine from the fermented rhubarb hot sauce. It will not affect the flavor, but it will make it last up to 6 weeks as opposed to 7-10 days!

The rest of the brine was added to the compost...all those good probiotics gotta do good somewhere!

On the homestead today...

I got out between the raindrops this morning to do some more garden prep...now I can't wait to plant! We're discussing the different kinds of peppers we to grow this year...I'd like to add poblanos (I know, not hot, but delicious smoked and roasted)...and hubby came across a beauty called sugar rush peach stripey (the equivalent heat of a good serrano,so again not really hot) - wow, very pretty!
..and... I'm putting together the fermented ghost strawberry rhubarb hot sauce with stinging nettle! I'm excited to try this one. If anyone's interested, send a message!

Looks like the weather for the next couple of days is great if you're a duck...or not wanting to water the garden again all season! 😉
