Tasty Thursday:

Brown Sugar Baked Salmon

Ingredients :
▢4 center cut Salmon filets, 6 oz each
▢2 tablespoons olive oil
▢1 tablespoon brown sugar
▢1 teaspoon Italian seasonings
▢1 teaspoon paprika
▢1 teaspoon garlic powder
▢½ teaspoon salt
▢½ teaspoon ground pepper
▢½ teaspoon crushed red pepper flakes
▢2 tablespoons parsley, chopped
▢Lemon wedges, to serve

Instructions :
Preheat the oven to 400 degrees F. Grease a baking tray with cooking spray or line it with parchment paper, then set it aside.
Pat dry the salmon filets with a kitchen towel and place them on the prepared baking tray.
Generously massage the salmon filets with olive oil on both sides.
In a small bowl, combine the spices for the rub: brown sugar, Italian seasoning, paprika, garlic powder, salt, and ground pepper.
Evenly sprinkle the spice rub over the salmon filets and place the baking tray in the preheated oven. Bake the salmon for 10-15 minutes or until it is cooked through and appears opaque.
Once the salmon is cooked, transfer it to a serving plate and generously top with red pepper and chopped parsley.

Serve the salmon with lemon wedges on the side and accompany it with a side of greens.

Sheet Pan Quesadillas

Directions:

1. Preheat oven to 400°F. Mix 1 1/2 cups of the cheese, corn, beans, chicken, tomato and Seasoning Mix until well blended.

2. Place 4 of the tortillas on 2 large sheet pans. Spread 1/4 of the chicken mixture evenly on each tortilla. Top with remaining tortillas. Sprinkle with remaining 1/2 cup cheese.

3. Bake 5 to 10 minutes or until cheese is melted and tortillas are lightly browned. Cut into wedges to serve. Serve with toppings, if desired.

Ingredients
6 tilapia fillets (6 ounces each)
1 cup canned Italian diced tomatoes
1/2 cup water-packed artichoke hearts, chopped
1/2 cup sliced ripe olives
1/2 cup crumbled feta cheese

Directions:

Preheat oven to 400°. Place fillets in a 15x10x1-in. baking pan coated with cooking spray. Top with tomatoes, artichoke hearts, olives and cheese. Bake, uncovered, until fish flakes easily with a fork, 15-20 minutes.

Are you looking for an easy clean up one pan recipe?

Cheesy Chicken Bacon Ranch Sheet Pan Meal

Ingredients:
2 lbs chicken breasts, cut into 1 inch pieces
3-4 medium potatoes, diced into 1 inch pieces
2 cups broccoli florets
8 strips of bacon, cut into small pieces
8 oz medium cheddar cheese, shredded
3 tbsp olive oil
1 oz packet dry ranch seasoning
Fresh parsley for garnish

Step-by-Step Guide:
1. Preheat the oven to 425 degrees. Grease a large sheet pan.
2. Cut the potatoes, broccoli, chicken and bacon.
3. Toss the potatoes and broccoli in a large bowl with 2 tablespoons of olive oil and ⅔ of the ranch seasoning packet. Pour onto the sheet pan.
4. Toss the chicken with 1 tablespoon of olive oil and the remaining ⅓ of the ranch seasoning packet.
5. Arrange onto the baking sheet.
6. Drop little pieces of bacon all over everything.
7. Bake for 25 minutes, then remove from the oven and top with cheese.
8. Return to the oven and bake for an additional 7-10 minutes until the cheese is melted.
9. Sprinkle with fresh parsley to serve if desired.

JULY IS UV Safety Awareness Month!

Spending time outside is a great way to be physically active and reduce stress. You can work and play outside without raising your skin cancer risk by protecting your skin from the sun.

Most skin cancers are caused by too much exposure to ultraviolet (UV) light. UV rays are an invisible kind of radiation that comes from the sun, tanning beds, and sunlamps. UV rays can damage skin cells.

Protection from UV rays is important all year, not just during the summer. UV rays can reach you on cloudy and cool days, and they reflect off of surfaces like water, cement, sand, and snow. In the continental United States, UV rays tend to be strongest from 10 a.m. to 4 p.m. daylight saving time (9 a.m. to 3 p.m. standard time).

The UV Index forecasts the strength of UV rays each day. If the UV index is 3 or higher in your area, protect your skin from too much exposure to the sun.
