One of the greatest things you can do for your health is to nourish yourself with real foods. In addition, food preparation is akin to meditation: a focused thought and action with the intent of health and celebration.
Through my own life hurdles, emotional and physical, I know that sometimes the last thing one has is the time or strength to muddle through the process, which can lead to quick, unhealthy food choices. And despite even my level of training and ability, I find that preparing a meal can be tedious and time-consuming.
Sadly, eating poorly and grabbing convenient, highly processed foods is a self-perpetuating cycle that feeds mental and physical dis-ease.
Sometimes there is a meal that is so colorful, textural, and delicious that it inspires one to take that extra time. This past weekend, I prepared a meal for 40 people (upscaling can be a challenge!). And then, with some leftovers, I made Leftovers Elevated.
Grilled Teriyaki Chicken & Extra Firm Tofu, Vegetables and Rice bowls: This was 95% vegan with a large, separated portion of grilled chicken that had been marinating for 7 hours.
Homemade wheat-free teriyaki marinade and glaze, white rice, grilled cabbage and sweet onions, and a side of teriyaki-marinated zucchini spears, steamed broccoli, with toppings of edamame, cucumber, diced tri-colored sweet peppers, sesame seeds, and teriyaki glaze. The next night, I used the leftover white rice (chilling or freezing overnight converts a portion to a resistant starch - research that benefit!) to make a vegetarian fried rice with all new fresh vegetables. As guests noted, the variety of colors, textures, and flavors creates an amazingly delicious plate of food.
