For most of human history, wasting food wasnât an option.
When an animal was harvested, people used as much of it as possible. That included nutrient-dense organs like liver, heart, kidney, spleen, and bone marrow, not because they were considered âsuperfoods,â but because they were valued as nourishing food and every part had a purpose.
