15-minute brunch prep today!
One of the things I love most about living in South Florida is having access to incredible local tropical fruits. Today’s plate includes fresh mango picked from a neighborhood tree, along with papaya, kiwi, banana, apple, fresh greens, eggs, and cheese which is a colorful combination that’s as nourishing as it is delicious.
Did you know every color nourishes your body differently:
🧡 Orange: Mango and papaya provide beta-carotene and vitamin C to support healthy skin, vision, and immune function.
💚 Green: Kiwi and leafy greens are packed with fiber, vitamin K, folate, potassium, and antioxidants.
🤍 White: Bananas provide natural carbohydrates and potassium, while eggs and cheese offer high quality protein, calcium, choline, and vitamin B12.
Healthy eating doesn’t have to be expensive or time consuming. This colorful brunch took about 15 minutes to prepare, and many of these foods were in season, on sale, or even picked fresh from a neighborhood tree! 🥭
If you have kids, invite them to help wash fruit, peel bananas, or build their own colorful plate. Getting them involved early can help create a positive relationship with food that lasts a lifetime.
