Fall Superfoods Salad
Makes 4 Servings
Salad:
1 10 ounce package of Shaved Brussel Sprouts
1 Cup of Cooked Quinoa
½ Cup Pomegranate Seeds
½ Cup (4 ounces) Crumbled Goat cheese
¼ cup Pumpkin Seeds
Dressing:
1/4 cup extra-virgin olive oil
1–2 Tbsp. apple cider vinegar
2 Tbsp. honey
1 tsp. Dijon mustard
Kosher salt and black pepper, to taste
