the Black Olive Restaurant, Thrifty's, Red Barn Market and the Root Cellar. and a variety of other stores and delis around the city. It sells for $25 a litre, $20 for 750 millilitres, $45 for a three-litre tin. Special discounts are applied when large volume purchases or special events. One dollar from each bottle and $5 from each tin is donated to the Queen Alexandra Children's Hospital Foundation.

CRETAN DIET AND OLIVE OIL

Crete has one of the oldest and most tasty gastronomic traditions in the world, a tradition of tastes, aromas, ingredients and skills that starts from the prehistoric times and continue until today.

In the international scientific community there has been a lot of research in the ideal diet that promotes health. The Cretan diet has been an object of study in the last years, since the majority of researches show that the Cretan cooking constitutes the most characteristic and of high quality example of the Mediterranean diet. It has been shown that the inhabitants of Crete have the lowest indicators of mortality and the lowest, on a global scale, mortality from cardio-vascular illnesses and cancers.

However, what is the secret of the Cretan diet? The answer is that the Cretans are raised with the products of the earth, that is they eat abundant greens and vegetables, pulses and fruit, season their food with herbs and plants of the mountains of the island, such as thyme and basil, while the food is nearly always accompanied by wine from the local vines and outstandingly tasty bread, which traditionally is made with yeast. Another characteristic of the Cretan cuisine is the variety of dishes, none of which monopolizes the taste but all together constitute a tasty meal.

However, the most important nutritional element is the oil, which for Cretans, as well as for all Mediterranean peoples, constitutes the basic source of fats. Olive Oil constitutes the base of the Cretan and Greek diet, and is used in the majority of plates replacing butter or other forms of oil which are used in other areas of the world. The nutritional value of oil is great, as it constitutes the most powerful natural antioxidant, protecting the organism from oxidation and the development of free radicals which cause serious illnesses.

Crete with its Mediterranean climate and the good composition of its ground allows olive trees not only to flourish everywhere, both in plains and in mountainous areas, but also to produce oil of the best possible quality, with low acidity and wonderful aroma. The fact that the Cretans live more and have the lowest indicators in the appearance of illnesses seems to be certainly connected with the fact that they consume olive oil daily.
