Witch's Wellness Potion - Purple Sweet Potato Soup

Purple Sweet Potato and Mushroom Soup
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 1 thumb-sized piece of ginger, minced
- 1 pound brown button (cremini) mushrooms, sliced
- 500 grams of purple sweet potatoes (ube, purple yam), peeled and diced
- 4 cups chicken or vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground cumin
- 1/4 teaspoon turmeric powder
- 1/4 cup Greek yogurt
- Chopped fresh cilantro, for garnish

Instructions:
1. Heat oil in a pot, add onion, garlic, ginger, and cook until softened.
2. Add mushrooms and cook until browned.
3. Add sweet potatoes, broth, seasonings, and bring to a boil. Reduce heat and simmer until potatoes are tender.
4. Remove from heat, mix in most of the Greek yogurt, and blend until smooth.
5. For the splotchy, witchy effect, mix the remaining Greek yogurt with some water and drizzle it stylistically.
6. Garnish and serve hot.

1) Watermelon is part of the Cucurbitaceae (or gourd) family, which also includes cucumbers,🥒 pumpkins 🎃and squash! Official name: Citrullus Lanatus.
2) Florida produces the most watermelon of any state.
3)The most watermelon eaten (appx 1.5 lbs. in 30 seconds), was achieved by André Ortolf (Germany) in Augsburg, Germany, on 4 August 2018. 😜
