I'm trying to come up with some protein breakfast ideas for my four year old as breakfast isn't usually very easy with him - he is allergic to nuts and eggs (although the egg allergy should pass and he can tolerate some egg in baking).

Huge thanks to Chat GPT for this amazing red lentil chocolate muffin recipe! They’re not only delicious but also free from refined sugar (unless you sneak in some chocolate chips 😉). Here’s the recipe:

🧁 Hidden Lentil Chocolate Muffins

100g cooked red lentils (very soft)
1 egg
80ml mild olive oil or melted butter
80ml maple syrup or honey
1 tsp vanilla extract (optional but recommended)
100g plain flour
2 tbsp cocoa powder
1 tsp baking powder
Pinch of salt
1–2 tbsp chocolate chips
1–2 tbsp milk (if batter is thick)

👩‍🍳 Method
Cook lentils
Rinse red lentils
Boil ~10–12 mins until very soft
Drain well and cool
Blend lentils
Blend until completely smooth (important for texture acceptance)
Mix wet ingredients
Lentils + egg + oil + maple syrup + vanilla
Add dry ingredients
Flour + cocoa + baking powder + salt
Mix gently until combined
Adjust texture
Batter should be soft and scoopable
Add a splash of milk if too thick
Bake
180°C (fan 170°C)
15–18 minutes
Until just set (don’t overbake = keeps them soft)
Cool completely
Texture improves as they cool

💪 Nutrition (approx per muffin)
~90–110 kcal
~6–8g protein
Good fiber content
