If you’re looking for a breakfast that’s quick, filling and packed with goodness, these Banana Oat Protein Flapjacks are a favourite in our home. They’re naturally sweet, high in protein and topped with a little nut butter and honey for the perfect finish.
🍌 Banana Oat Protein Flapjacks
Ingredients
* 2 ripe bananas, mashed
* 2 eggs
* 1 cup rolled oats
* 1 tbsp whey protein powder
* 1 tsp baking powder
* 1 tsp cinnamon (optional)
* 1 tsp vanilla extract (optional)
* A handful of blueberries (optional)
Toppings
🥜 Nut butter or peanut butter
🍯 Honey
Method
1. Mash the bananas in a bowl.
2. Add the eggs and whisk until combined.
3. Stir in the oats, whey protein, baking powder, cinnamon and vanilla.
4. Fold in the blueberries if using.
5. Heat a lightly greased pan over medium heat and spoon the batter into small flapjacks.
6. Cook for 2–3 minutes per side until golden brown.
7. Serve warm with a generous spoon of nut butter (or peanut butter) and a drizzle of honey.
