Vegan Apple and berry crumble

4 M-L green apples (Granny Smith)
1 lemon juiced 30ml
2/3 C Coconut Sugar
1 1/2 Tsp Ground Cinnamon
3 Tbsp Cornstarch
1/4 C Apple Juice (I took 1 Granny Smith apple and a few berries with lemon juice and blitzed it in the nutribullet for liquid)
3/4 tsp grated ginger OR 1/2 tsp ground ginger
1 pinch nutmeg

TOPPING:
1 C Gluten free Oats
1/2 C Gluten free Flour
1/2 C Coconut Sugar
1/2 C chopped Peacan Nuts
1/4 Tsp sea salt
1 tsp Ground Cinnamon
1/2 C Coconut Oil

1. Preheat oven 176°C
2.Peel apples, cut into thin slices
3. Lay the apples in a baking dish.
4. Add all the first group of ingredients in a bowl and then pour over the apples and berries.
5. Add all the topping ingredients to a mixing bowl and mix well.
6. Sprinkle over the apple mixture.
7. Bake for 50 minutes to 1 hour.

Serve with Coconut cream.

Do you want to understand how essential oils work?

It's really exciting and starts with understanding constituents. The main constituents found within plants that make up the lightweight molecules of essential oils are monoterpenes, sesquiterperpenes, monoterpene alcohols, esters, aldehydes, ketones, phenols etc.

Each essential oil contains several but not all of these.

Let's take Frankincense Essential oil (Boswellia carterii) as an example. It's key constituents are as follows:
Alpha-Pinene (30-65%)
Limonene (8-20%)
Sabinene (1-8%)
Myrcene (1-14%)
Beta-Caryophyllene (1-5%)
Alpha-Thujene (1-15%)
Incensole; ORAC: 630uTE/100g

These constituents give each essential oil their unique properties such as being anti-viral, anti-bacterial, antidepressant etc when seen how they interact with our bodies on a cellular level. That's also why there is overlapping functions in different oils; they make have some of the same key constituents.

Many drugs are made by mimicking the chemical make-up of these naturally occuring constituents!
