Roasted Pumpkin Soup & Portuguese Rolls

My youngest has told me I can start a cafe 😄

My Portuguese dough was a little wet I went 10g over the water required in the recipe. The rolls were still delicious. I covered the dough with flour and used a dough scraper to cut the dough into portions .

I'm not very good at following a recipe when I make soup. I love to roast it with garlic and cumin.

I can never decide between sweet and savoury so I made both 😄

Brazillian cheese puffs
Quick, easy and gluten free. My kids love these and so do I. They do need to be eaten fresh on the day but they're so easy to make that is never a problem.

Brown butter chocolate chip cookies
I used Cloudy Kitchen's recipe. The high heat function works amazingly to make the brown butter and my kitchen smelt amazing 😍

Tuna Sushi Bowls

My kids enjoy these in their lunchbox, especially when they need a change from sandwiches and scrolls. They're very quick to make and can be prepared the day before. Protein can be changed to your favourite sushi filling.

My favourite food book is Toast by Nigel Slater. I love how he wrote a book built around food memories, and I found so much of it relatable.

Apple crumble is something we often had during winter growing up. It's comfort on a plate.

This Flapjack Crumble combines another favourite childhood treat. My pocket money would often go on a buttery, oaty flapjack slice from the school canteen. My sisters and I would take turns baking cakes, biscuits and slices at home, and flapjacks were always on heavy rotation.

One of my strongest food memories is from a school trip to Kentwell Hall. I can't remember how much those flapjacks cost now, but I remember thinking they were money very well spent!

So this Flapjack Crumble ticks all the boxes for nostalgia and happy food memories for me.

I skipped the cinnamon ice cream and served mine with homemade Thermomix custard instead. Perfect for a cool evening and a little trip down memory lane. 💚

A quick trip to see Nanna, now we live a bit closer. Made a few things in the TM6 this morning.

Lemon curd made with Nanna's lemons and eggs.

Cooked mayonnaise with fresh eggs.

Thermobliss Date scones.

We picked a few mandarins from Nanna's tree. I might make a mandarin and almond cake later in the week if they don't all get eaten.

Milanese Risotto

It's one of my favourites! Saffron was purchased from Aldi a few weeks ago when they had it in. Served tonight with perfectly cooked poached eggs using the blade cover 👌

I don't see risotto on the menu as much in Australia but it was a dish I cooked a lot in restaurants I worked in the UK.

Have you made risotto in your Thermomix®️?
