My favourite food book is Toast by Nigel Slater. I love how he wrote a book built around food memories, and I found so much of it relatable.
Apple crumble is something we often had during winter growing up. It's comfort on a plate.
This Flapjack Crumble combines another favourite childhood treat. My pocket money would often go on a buttery, oaty flapjack slice from the school canteen. My sisters and I would take turns baking cakes, biscuits and slices at home, and flapjacks were always on heavy rotation.
One of my strongest food memories is from a school trip to Kentwell Hall. I can't remember how much those flapjacks cost now, but I remember thinking they were money very well spent!
So this Flapjack Crumble ticks all the boxes for nostalgia and happy food memories for me.
I skipped the cinnamon ice cream and served mine with homemade Thermomix custard instead. Perfect for a cool evening and a little trip down memory lane. 💚
