Liver-Loving Bitter Salad

Your liver loves bitter foods, they stimulate bile flow and support digestion. 
 
This is my go-to Liver-Loving Bitter Salad. 
Serves 4
 Ingredients:
1 head of chicory, roughly chopped
2 handfuls of rocket
1 fennel bulb, very thinly sliced
1 pink grapefruit, segmented
A handful of chopped  walnuts
 
Dressing:
3 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
1 tsp Dijon mustard
A pinch of sea salt
 
Method:
Whisk the dressing ingredients together. Toss the chicory, rocket, and fennel in a bowl. Add the grapefruit segments and walnuts. Pour over the dressing and mix well.
Eat this before your main meal to get that digestion going  or add your choice of protein to make it a main meal. Functional and sharp.

This Summer think about taking care of YOU! And I mean the emotional YOU.

Chronic stress keeps your body in a low-grade state of threat, and in that state, digestion is compromised, hormones are dysregulated, and inflammation runs quietly in the background. You can be doing everything right nutritionally and still feel it.

Talk therapy is something I rate highly and personally consider non-negotiable. Stress and trauma are often stored in the body, not just the mind. That is where somatic work becomes relevant. Breathwork, vagus nerve stimulation, somatic movement. These are tools that work at a nervous system level, not just a cognitive one.

If you are doing all the right things and still not feeling well, that is often the missing piece.

This summer, treat your nervous system to a bit of love - think about adding in some boundaries and breathe!

Spiced Lentil & Spinach Stew with Coconut

I love this one - it is basically a dahl but more stew like, A great one to batch cook.  Lentils give you a steady, slow-release source of carbohydrates and some plant protein and a bit of non heme iron. Adding a squeeze of lime at the end - the Vitamin C significantly increases how bioavailable that iron is.  
Serves 4
 Ingredients
200g split red lentils, rinsed
1 tin (400ml) full-fat coconut milk
250ml vegetable or bone broth
1 large onion, finely diced
2 garlic cloves, minced
1 thumb-sized piece of fresh ginger, minced
1 tsp ground turmeric
1 tsp (or more)  chilli flakes
2 large handfuls fresh spinach
Juice of 1 lime
1 tbsp olive or coconut oil
Sea salt

Method: Sauté the onion, garlic, and ginger in olive oil until soft. Add the turmeric and chilli flakes. Stir in the lentils, coconut milk, and stock. Simmer for about 20 minutes until the lentils are soft and the stew is thick. Stir through the spinach until wilted, and finish with a generous squeeze of lime.

Let us talk about lymphatic drainage.

Your lymphatic system is responsible for clearing cellular waste and toxins. But unlike your blood, it does not have a pump. It relies entirely on your movement.
If you sit at a desk all day, your lymph stagnates. You get puffy, your immunity drops, and you feel sluggish.
You have to move it manually. Dry body brushing before your shower. Rebounding (jumping on a mini trampoline). Contrast therapy (hot and cold showers). Or just going for a brisk walk. Move your body, move your lymph.

Jersey Royal, Watercress & Mackerel Salad

Omega-3s are fundamental for reducing inflammation and supporting brain health, and mackerel is one of the best sources we have. Pair it with peppery watercress—a cruciferous powerhouse packed with iodine for your thyroid—and seasonal Jersey Royals for a perfectly balanced, hormone-supporting lunch.
 
Serves 2
 
Ingredients
300g Jersey Royal potatoes (or any small new potatoes), scrubbed
2 large handfuls watercress
2 smoked mackerel fillets, skin removed
2 tbsp extra virgin olive oil
Juice of ½ lemon
Sea salt and plenty of black pepper

 
Method: Boil the potatoes until tender. Let them cool slightly, then halve them. Toss with the watercress. Flake the smoked mackerel over the top. Dress simply with olive oil, a squeeze of lemon, and plenty of black pepper. The creaminess of the potatoes balances the sharp watercress perfectly.

Cooking method is not a minor detail. It does impact the nutrient profile of what we eat.

A few things worth knowing.
Boiling leaches water-soluble vitamins directly into the water. If you are not drinking the water, you are not getting the vitamins. Steam instead, or roast, or sauté.

Raw is not automatically better. Lycopene in tomatoes, beta-carotene in carrots, and several other compounds become significantly more bioavailable after light cooking. Blanching and light steaming often hits the sweet spot between raw and overdone.

Fat-soluble vitamins, A, D, E, and K, require fat for absorption. Eating a plate of steamed greens with nothing on them means you are absorbing a fraction of what those vegetables contain. Quality olive oil, butter, or ghee alongside your vegetables is a great addition. It is how the nutrients actually work.
Slow cooking retains minerals well because you consume the liquid rather than discarding it. A slow-cooked braise or a proper bone broth is quietly one of the most nutrient-efficient ways to cook.

High heat and charring creates advanced glycation end products, AGEs, which contribute to inflammation and accelerated cellular ageing. Aim for golden. Not black.
And pay attention to your cooking oils. Every oil has a smoke point, the temperature beyond which it oxidises and becomes pro-inflammatory. For high heat cooking, use stable fats. Ghee, coconut oil, tallow. Save the cold-pressed olive oil for dressings and finishing.

Buy well. Cook smart. The food cannot do its job if you have already undone it in the kitchen.

Pan-Fried Sea Bass with Broad Bean & Mint Mash

Broad beans are the absolute stars of summer produce for me. They are a brilliant source of plant protein, fibre, and L-dopa (a precursor to dopamine). Mash them up with mint and lemon, and serve under a piece of crispy-skinned sea bass for a clean, easily digestible dinner that supports cellular repair.
 
Serves 2
 
Ingredients
2 sea bass fillets, skin on
250g broad beans (fresh or frozen)
1 small handful fresh mint, finely chopped
Juice of ½ lemon
2 tbsp olive oil
Sea salt and black pepper
Method: Blanch the broad beans in boiling water for 3 minutes. Drain and roughly mash with a fork, adding a splash of olive oil, lemon juice, and the mint. Season the sea bass and pan-fry skin-side down in olive oil for 3-4 minutes until crisp, then flip for 1 minute. Serve the fish over the bright green mash
