For the past month, I’ve been freelance cheffing at … and wow, I’ve been deeply humbled.
When I was 20, my dream was to cook in restaurant kitchens around the world. Instead, life took me down a different (and very beautiful) path… Meringue Girls, food styling, writing, podcasting, somatic coaching - A dream, truly.
But there’s always been a small part of me that wondered about the road not taken…
Recently, through my friend I got the opportunity to step into the kitchen at Sessions (one of my fave restaurants in London). And even though it felt scary and out of my depth, I knew I had to give it a crack. Even just for a moment.
And now i’m here (once a week), feeling like a total nonna next to a brigade of insanely talented humans, slightly broken-backed (lol), but completely in awe. Chefs work so hard. like… really hard. And they’re teaching me so much. I especially LOVE seeing all the women in the kitchen smashing it. It really inspires me.
I’m discovering ingredients I didn’t even know existed, how simplicity rules the world, new plating ideas, systems, roles, rhythms, responsibilities and witnessing the choreography between front and back of house. It’s so precise, so intentional. Honestly, fascinating to step inside.
And even though it’s fast paced, exacting and high-pressure… it somehow quiets my very busy brain in a way I haven’t experinced in a while.
The team are so supportive and kind and I just feel super grateful for the opportunity 🤍
