We talk a lot about the benefits of organ meats, but what nutrients are actually in them?
The answer depends on the organ, of course. Liver offers something different from heart, just as heart offers something different from kidney.
But across the animal, you’ll find a wide variety of nutrients and they all have unique jobs to do in the body, from supporting red blood cell formation and normal nerve function to energy production, thyroid function, connective tissue maintenance and more.
That’s why nose-to-tail nutrition isn’t really about finding one “superfood”. It’s about looking beyond muscle meat and recognising that different parts of the animal bring different nutritional value.
When you consider the animal as a whole, you start to see how every part has something to offer.
