Ingredients:
2 tbsp Extra Virgin Olive Oil
1 brown onion, finely chopped
1 leek, white part only, finely sliced
1 garlic clove, crushed
1/2 tsp ground coriander
1 tsp ground cumin
1/2 tsp freshly grated nutmeg
1kg peeled pumpkin, diced
1 large potato, peeled, diced
1L chicken stock or vegetable stock
1/2 cup (125ml) thin cream
Directions:
1) Warm the olive oil in a large soup pot over low heat. Add the chopped onion and sliced leek, then cook for 2–3 minutes, stirring occasionally, until they become soft and fragrant without browning.
2) Stir in the crushed garlic, ground coriander, cumin, and freshly grated nutmeg. Cook for about 30 seconds until the spices release their aroma. Add the diced pumpkin, potato, and stock, then bring the mixture to a gentle boil. Reduce the heat, cover, and let it simmer for approximately 30 minutes, or until the vegetables are tender. Remove from the heat and allow the soup to cool slightly before blending in batches until smooth.
3) Pour the blended soup back into the saucepan and mix in the cream. Warm gently over low heat without boiling. Taste and season with salt and freshly ground black pepper. Add an extra pinch of nutmeg, if desired, before serving.
