You only need a few simple ingredients to make light summer meals that come together quickly. When it’s hot outside we often don’t feel like eating a heavy (or hot) meal. Did you know that is our body’s way of helping us regulate temperature?

As the summer heats up, lean in to fruits and vegetables (frozen or fresh), add some protein (endless options but lighter / leaner choices like chicken, fish, beans.. may feel better this time of year). Get a little fat in too! Cook or drizzle w olive oil, add a small handful of nuts or seeds.. and toss it in your favorite bowl ! Smaller portion sizes may feel better this time of year as well.

Now about the video…. Roasted Brussels in the air fryer (7 min), tossed the shrimp skewer in a quick homemade Chimichurri (with fresh herbs from my garden, garlic, olive oil, lemon.. but you could easily use a jarred option) and baked for about 7-10 minutes in the oven. Served over the Brussels over a bed of mixed greens, topped with skewers of shrimp, drizzled olive oil and lemon over everything, the end!

Tips and side notes:
1) lean in to ready made and local sources for short cuts - FeedMe Chutney and Garner's Produce. And don’t forget eating more “plant foods” is generally always a good thing - no matter the form - don’t feel guilty or defeated if you eat frozen or canned (use low sodium and rinse).
2) use any kind of vegetables (or fruit) you like!!
3) dried herbs and spices are just fine!!! Just because I find growing (and chopping) my own relaxing - I know that’s not everyone’s thing!
4) make extra so you have another quick meal at the ready!!
5) don’t listen to TikTok and Instagram…. Protein is important but skipping it in a meal from time to time will not be your downfall!

Funny how Facebook memories can stop you in your tracks…

These healthy meal photos popped up from 6 years ago, and my first thought was: honestly, these could have been from almost any random day over the past 20 years.

Not because I’ve done it perfectly.
Not because I’ve followed one rigid diet.
Not because I’ve never struggled.

But because this really is how I live.

The coaching I give my clients is the same kind of grounded, realistic, personalized approach I’ve practiced in my own life for almost two decades.

It’s not a diet. It’s a lifestyle.
It’s not about perfection. It’s about balance.
It’s not one-size-fits-all. Your version of “healthy” should actually fit you — your body, your goals, your season of life, your real schedule, and your real challenges.

There is so much hype out there right now around food, health, weight loss, hormones, supplements, and “quick fixes.” And yes, sometimes there are foundational truths buried in the noise… but those truths still need to be customized to the person.

That’s where real coaching matters.

I don’t teach this because it’s trendy.
I teach it because I live it, I’ve struggled through it, I’ve learned from it, and I know how powerful it can be when healthy living feels doable instead of overwhelming.

Morning rituals don’t have to be complicated to be powerful. ☕️✨

This is one of my favorite parts of my morning routine — coffee, collagen, cinnamon, and a few quiet minutes before the day gets moving.
