Are there really any healthy restaurants out there? Sure there are tons of restaurants that consider themselves healthy. But this is the biggest area of personal frustration since my cancer diagnosis. So here comes my āIMHOā
Letās start with why this should matter more. In America alone approximately 1in8 women will have breast cancer; 1in4 men will have prostate cancer; 1in11 will have diabetes; 1in3 will have per-diabetes; and 4 out of every 10 are obese. These are random facts to segway into Metabolic Disease, but these are only a very few.
What is a metabolic disease? According to Britannica, ā metabolic disease, any of the diseases or disorders that disrupt normal metabolism, the process of converting food to energy on a cellular level. Thousands of enzymes participating in numerous interdependent metabolic pathways carry out this process. Metabolic diseases affect the ability of the cell to perform critical biochemicalreactions that involve the processing or transport of proteins (amino acids), carbohydrates (sugars and starches), or lipids (fatty acids).ā
And what is the #1 thing that can change metabolic disease? DIET! And yes, diet IS considered a treatment of many diseases.
So, when I discuss why itās important for restaurants to understand what actual heathy foods are, it comes from the staggering statistics of just how many Americans, struggling with diseases, are eating out nowadays. But back to my point. You can offer the best of salads, smoothies, grass fed meats, etc, but most restaurants use sugar in all of the recipes. At the very least, their condiments like catsup, mayonnaise, dressings, sauces all contain sugar. Soupsā¦sugar. Drinks...sugar. Breadsā¦sugar.
And let me be specific here - gluten-free is NOT healthy bread! It is bread that does not have gluten, which is bad for most peopleās digestive systems and dangerous for Celiacs Disease; However, it is still HIGH IN CARBS and the only form of carbohydrate that does not effect blood sugar is fiber (that is why some folks count net carbs which = carbs-fiber). If you look at the ingredients of Udiās gluten free bread, you will see many other not-so-good ingredients, including sugar.
When it comes to therapeutic levels of ketosis, here are some of important things.
-You need a LOT of healthy fat - but you must be careful with too much dairy, ie butter, cheese, cream, (lactose=sugar) There are blood markers that can guide you to how your body tolerates dairy.
-You need to moderate your protein. ie meats, fish & eggs, (proteins can be converted to glutamine, which also increases blood sugars).
-Breads, pastas, potatoes, fruits, rice, oats, beans/legumes⦠these are all too high for good keto #ās.
The only fruit I have are berries - and Iām talking 3-4 blueberries, NOT a pieās worthā¦.
And then there are desserts. I donāt recall a single restaurant serving anything without sugar as dessert. Now, firstly it can be done (check out the Sweetish Chef š«¶š») but my trick most days is to order a cappuccino while others indulge. I would love to see a restaurant offer Fat Bombs as a dessert š¤
Today I had breakfast out. I was excited to see keto-friendly bread on the menu. However, when I inquired what it was, they said they no longer carry it because no one was buying it. First and foremost you need to know why it is an important option, and second, you need to know how to properly market it and educate people why it is the healthier option. You donāt need to be eating Keto to benefit from it, but if you are eating Keto for disease, anything else is not an option.
So I ordered 1 egg with cheese, and a whole avocado. The owner came out to offer me 2 eggs and half an avocado because he didnāt feel right charging me $10 for my avocado (which I had already paid for without complaint, I might add). I started to explain that I needed fat, not protein because Iām on a ketogenic diet, but was somewhat rudely told that he didnāt need to know my specifics, that he knows all about the ketogenic diet.
Well Iām pretty sure of two things: keto to him is dirty keto, NOT therapeutic keto; and he has no idea what I have been through for 4 years.
