Purple potatoes 🥔

I picked up these beauties at Oakleys Farmers Market on my way home from Chincoteague, Virginia this weekend.

Potatoes often get a bad rap because of their high starch content, but they contain many other important nutrients and can be a very healthy addition to your diet.

Purple potatoes are an excellent source of potassium, vitamin C, vitamin B6, and the antioxidant, anthocyanin, which has been studied as an immune system booster and is the same antioxidant found in blueberries and blackberries. Interestingly, potatoes have more potassium than bananas.

In addition, a serving of potatoes provides 3 grams of fiber, from both the flesh and skin, and they’re naturally low in sodium. They have a denser texture and slightly nuttier, earthier flavor than white potatoes.

Purple potatoes are a healthy and colorful member of the potato family that’s worth getting to know. You can prepare them similarly to how you would prepare white or yellow flesh potatoes, but if you swap them in, you’ll enjoy quite a few health benefits.

Pizza and Fridays were just made for each other 🥰 What better way to reward yourself for killin’ it all week than getting cozy with a hot, homemade QUINOA CRUST pizza?!

Typical delivery or store-bought pizzas are full of sodium, saturated fats, trans fats, inflammatory oils, chemicals, and sugars. Slather all of that on top of a nutritionally-void white flour crust, pile on a brick of cheese, and you're bankrupt in the nutrient department.

Making your own Gluten-Free Quinoa Pizza Crust comes together with just a few ingredients, a blender, and your oven.

Tonight I took my quinoa pizza crust and topped it with artichokes, roasted garlic, sundried tomato, red onion, broccoli, leftover chicken, and feta.

Overnight oats have been winning my heart for the past couple of months.

Cool, creamy, and bursting with flavor and nutrition, this recipe has been making my mornings soooo much more efficient. I prep it the night before and then decorate and devour in the morning! 👏

1/2 cup rolled oats
1 teaspoon cinnamon
1 tablespoon chia seeds
1 cup almond milk

Whisk ingredients together and set in fridge overnight. In the morning, top with walnuts/pecans and the berries of your choosing!
