On Monday we started our Fermenting workshop series. Our first fermenting was all about sodas.
We learned about wild sodas, made ginger bug, and soda with ginger bug.
Wild sodas are made using wild yeast that is in flowers and berries. Of course there is a need for a sweetner to feed the bacteria to grow and start fermenting. Here you can see the beautiful foam that is showing how wonderful it is working. And then it is strained and capped in the bottle to let the carbonation happen.
This will be white clover and strawberry soda. I am looking forward to taste it.
