It’s always a ‘chopped kitchen basket’ mixed with ‘a splendid table’ conundrum in this house…it’s the improv rustling up part that’s fun. IYKYK
Mushroom, black beans, fire roasted tomatoes, red pepper, Anaheim pepper, onion, garlic, cumin, ancho chili powder, lime juice, roasted tomatillo sauce (made the day before) and broth/garlic/butter/masa flour on top.
Bake @400 for 40 minutes or so.
