My Vegan Oatmeal Cranberry Cookies from the Garden of Eydie will have you living the sweet life without the unhealthy downsides! 🍪

These coookies are SO popular with my friends and families, and even my videographers couldn’t help but munch on the job 😆

I use dried cranberries to ensure that only natural sugar is used in this recipe, and I bake them for an extra minute to make sure they’re crispy on the outside, while still perfectly chewy on the inside! 😍

It’s finally 5 o’clock, but it doesn’t even matter with this magnificent mocktail with cucumber, pineapple, and a jalepeño kick! It’s time for part 2 of this delicious, non-alcoholic drink. 🥒🥂✨

Here’s a healthy hint: it tastes ~even better~ when you share it with a friend or two! Shake up your alcohol free cucumber pineapple and jalepeño mocktail from the Garden of Eydie and stay hydrated all summer long! 🌞🥒🍍

Make sure to muddle your mint and jalepeño in whatever you’ve got on hand — I used a mortar and pestle!

Enjoy a fresh bowl of ‘peas’ on earth with this delicious plant based chilled green pea soup recipe! 🫛🍲👩🏻‍🍳

I had the best time cooking this recipe, inspired by the late Michelin star Chef Charlie Trotter, but I made it Garden of Eydie approved without adding any salt, oil, or sugar! Peas are at their peak of sweetness right now and are so delicious in this fresh chilled soup recipe. Doesn’t that sound delicious? 😋

Peas are tiny but mighty, full of fiber, protein and vitamins, yet low in calories. Mint brightens the flavor of this soup while the tomato adds another layer of sweetness and the avocado adds a delicate richness.

This beautiful soup makes for an elegant first course or lunch with friends, and pairs perfectly with my Yellow Tomato Soup Sorbet recipe... Coming Soon! 👀

Here are the ingredients for this Chilled Green Pea Soup:
For the Soup:🫛

2-½ cups sugar snap peas, blanched
1-⅔ cup sweet peas, blanched, divided
⅓ cup fresh mint leaves
½ cup (more if needed) blanching water
freshly ground black pepper (and salt-optional)

For the Tomato Concasse:
2 tablespoons minced shallots
1 garlic clove, minced
3 medium sized red tomatoes (about 1-½ pounds) to make 1 cup tomato concasse
2 teaspoons aged balsamic vinegar

For the Avocado: 🥑
1 large avocado, peeled and diced
1 tablespoon freshly squeezed lime juice

For the Crema: 🍅
2 tablespoons vegan Greek yogurt + 1 tablespoon water
1 tablespoon pink peppercorns, ground (or sumac or sweet paprika)

4 small sprigs of mint (for garnish)
