the girls got together so obviously we had to make the BEST quick + easy lunch (with a coconut lime dirty soda on the side): crispy chicken caesar lettuce cups! recipe below 💋🥬🍗

2 chicken breasts, sliced in half lengthwise into 4 thin cutlets
1 egg
¾ cup panko breadcrumbs
¼ cup tapioca or cornstarch
3 tbsp finely shredded parm
1 tsp sea salt
1 tsp garlic powder
Avocado or olive oil, for frying
Flakey sea salt, for finishing
Caesar dressing of choice (homemade or use Primal Kitchen ) like we did
Gem or romaine lettuce cups
MORE PARM

Mix breadcrumbs, starch, parm, salt, garlic powder + some fresh black pepper in a shallow bowl. Whisk egg in another shallow bowl.
Take a chicken cutlet and dip first into the egg, shaking off excess, then into the breadcrumb mixture, pressing to evenly coat both sides.
Heat about 1 inch of oil in a large skillet and fry cutlets for 3-4 minutes per side until browned and crispy and cooked through. Place on a wire rack and sprinkle with flakey salt, then slice and serve in lettuce cups with dressing + parm!
