If I had the energy to recreate this epic Super Bowl spread and I made, I’d be sitting real happy.
But, this time, I’ll probably make a single potentially epic dish and grab a massive bag of chips and a massive dip…or, order takeout.
It’s a toss up.

If you didn’t know, my major solo traveling expedition from three years ago came about because of my deep, unexplained desire to revisit Europe, but more specifically, Ireland, for the first time. Not only was that entire trip a complete life-changer, but Ireland left an imprint.
Skip to now, and my fiancé (I swear I didn’t plan that) has helped me learn even more about Irish culture and the history of Ireland 🇮🇪.
So, for this I recommend not just drinking the day away but instead taking some time to learn about Irish culture.
You can even do so while enjoying his latest recipe 🤤.

Side Note: If you visit Ireland, don’t miss the Cliffs of Moher! It was one of the best experiences 🙌. Check out my IRELAND highlight circle.

All the components I want for a perfect breakfast burrito:
• ’s tofu scramble
• crumbled patty
•
• sautéed spinach or kale
• black beans
• avocado
• super mild chipotle mayo
• tortilla

It doesn’t even have to be breakfast. I’ll gladly eat this for dinner too 😋

For as many times as I’ve traveled to Brighton in the last three years, the past two I haven’t made the easy train ride to London because of COVID.
Finally making the trip up felt like such an adventure, such an escape. It almost felt wrong.

Palm Desert / California

The desert has an energy you can’t really put your finger on.
It can either relax you or make you anxious, depending on how your vibrations are flowing.
Have you ever heard of spiritual vortexes? The desert has a few.
That aside, there are also hidden gems sprinkled throughout like the The Pink Cabana.
I love the vibe and I love how considerate they were in accommodating my diet specifications.
I haven’t stayed at the hotel yet, but I see it in the cards.

I did a couple swaps today in my TTLA to be a bit more GERD friendly and it was 🙌
- no tomato
- no onions
- no garlic mayo
- add cucumbers
- add sauerkraut
- add plain vegan mayo
- extra avocado
