I began my interest in healthy eating and living a healthy lifestyle in 1999. I was diagnosed with severe food allergies, suffering from dangerously low blood sugar numbers and looking into the variety of health issues family members had through the generations/years. As my health declined and my weight increased, my interest and need to be more healthy grew. I work long days as a teacher and have

a variety of other commitments, as we all do. This page will follow my daily, weekly, monthly journey to set aside time to prepare healthy meals and snacks, force myself to work out and challenge myself to keep learning about what it means to be healthy... the best way I can. You won't see perfect or touched up food pictures here. I hate to work out so there will probably be some complaining about that aspect of my health journey. I love to garden so there will be many flower and veggie pics during the summer months. The name of this page, "The Cutting Board" came to me as I spend much time standing above my green cutting board in the kitchen. That board has been on many a food journey with me. When I think of healthy eating food prep, there is always a cutting board involved. Hence the title "The Cutting Board". Please know I do not have any formal medical training so take my suggestions with a grain of salt. You know your body and when in doubt always consult your Dr. I also do not receive payment for any items I talk about on this page. My goal is to share what I have learned through the years, share my passion for delicious, easy to prepare foods, and to just support each other as we are all in various of stages of healthy living.

✅Final day of Tiny Task Week!

✅ Sorted through shoes to give away and reorganized the ones I wear the most often. The bottom of the shoe holder has always driven me nuts because it was so long. Today, I cut it shorter and I’m kicking myself for not doing it sooner. I keep a box where I store stocking stuffers in this part of the closet and now the space is far more usable. )Yes, I’ve already started Christmas shopping. I like to be done by November 1st.)

✅It’s Mini Task, Tiny Task, Micro Mini Chores….whatever you call it, week!

✅I have been piling stuff under this desk for a year. It stresses me out every time I look at the area. All the binders, papers and baskets needed a new home. It took 20 minutes. I even vacuumed and wiped up the floor and wall. Twenty darn minutes is all it took to bring me peace.

✅Onto the next Tiny Task of the week!

✅The basement craft area is a mess. Piles of random things and items not in their homes. I spent 16 minutes putting things away and later tonight I’ll deal with the rest. It should only take about 10 minutes. Then I can walk into the basement and not feel mess stress.

🌎Happy Earth Day!

♻️Going green sounds so easy, expensive, time consuming and complicated all at the same time. Is this an area of life you’ve been meaning to tackle? Then now is your time! This week we are selecting one AREA of the house to address. By starting this transition with one room, we are setting ourselves up for success and motivation to keep going.

💚In the area you choose, consider cleaning products, chemicals in items you use, one off plastic packaging, things that can be reused/upcycled, paper/plastic usage and the list could go on and on.

💻A quick internet search will give you more suggestions if you need them and tips on achieving your goal. My suggestion is to start small. Maybe you switch to cloth napkins for meals, chemical free dish soap, buy food in bulk to reduce plastic containers, and bring your own travel mug when you pick up a coffee/smoothie/juice to-go.

⭐Take a few minutes and think about what your Environmental Wellness goal is for the next 7 days. Write it down. Block off time in your calendar. Let’s go!

🧄Happy National Garlic Day!

🧄Garlic is so flavorful and literelly the easiest thing to grow. Just before the ground freezes in the fall…plant 1 clove, root facing down and voila! Come July you have garlic. Each clove planted becomes 1 garlic head.

Earlier this week I had surgery to remove ovarian cysts. I had been debating the procedure for a year and ended up getting a second opinion from a Dr I felt more comfortable with. He was able to keep both ovaries which was a pleasant surprise, one that was definitely not expected. He also loosened a bowel adhesion (probably caused by my diverticulitis).

Recovery is going well and I credit most of that to planning ahead.

⭐Wonderful medical team.⭐
✅Cleaned the house.
✅Fresh bed sheets and a clean comforter.
✅Planned meals for the week (as usual).
✅Prepped meals for the week (as usual).
✅Prepped smoothies (as usual).
✅Tray of recovery activities..books, coloring books, word finds, stocked up on puzzles.
✅Bought comfy rompers to wear during recovery so nothing was around my abdomen.
✅Prepped meds for two weeks.
✅ Planned ahead with work and deligated tasks so I could take off of work for 2-3 weeks and not worry about anything.
✅Talking with Mr. Cutting Board about what recovery might look like.
✅Pretty toes, because who doesn’t need a pop of spring color.
