COCONUT LIME GRILLED CHICKEN
✨ Juicy, zesty, summer perfection!
Ingredients:
2 lbs chicken thighs
1 cup full-fat coconut milk
Zest + juice of 2 limes
3 garlic cloves (minced)
1 tbsp grated ginger
1 tbsp honey
2 tbsp olive oil
1 tsp salt, ½ tsp pepper
1 tsp smoked paprika
½ tsp chili flakes
Chopped cilantro + lime wedges to serve
Instructions:
Mix everything (except the cilantro) and marinate chicken 2 hrs or overnight.
Grill 5–7 min per side till juicy & charred.
Top with cilantro + lime wedges. Done.
Eat with cauliflower rice, slaw, or straight off the grill with your fingers like a wild summer beast. 🔥
