🥩 GRILLED GARLIC-ROSEMARY STEAK
Fire up the grill for a juicy, flavorful steak packed with garlic, rosemary, and a beautifully seasoned crust. Simple ingredients and high heat create a steak that's tender on the inside and perfectly charred on the outside.
INGREDIENTS:
• 2 ribeye or sirloin steaks, about 8 oz each
• 2 tbsp olive oil
• 3 cloves garlic, minced
• 1 tbsp fresh rosemary, chopped
• 1 tsp kosher salt
• ½ tsp black pepper
• 1 tsp smoked paprika
• 1 tbsp Worcestershire sauce
• 1 tbsp butter
• 1 tsp fresh lemon juice
HOW TO MAKE IT:
1. Prepare the Steak:
Pat the steaks dry with paper towels and place them in a shallow dish. Combine the olive oil, garlic, rosemary, salt, pepper, smoked paprika, and Worcestershire sauce, then rub the mixture evenly over both steaks. Let the steaks marinate for at least 30 minutes at room temperature or up to 4 hours refrigerated.
2. Grill the Steak:
Preheat your grill to high heat and lightly oil the grates. Grill the steaks for about 4–5 minutes per side for medium-rare, adjusting the time according to thickness and desired doneness. During the final minute, add the butter to the steaks and spoon the melted butter over the top.
3. Rest & Serve:
Remove the steaks from the grill and let them rest for 5–10 minutes so the juices can redistribute. Finish with the fresh lemon juice and a light sprinkle of additional rosemary if desired. Slice against the grain and serve immediately.
🍢 GRILLED GARLIC-HERB CHICKEN SKEWERS
Tender pieces of marinated chicken are paired with colorful peppers and grilled until lightly charred and deliciously juicy. Garlic, lemon, oregano, and smoked paprika give these skewers a bright, smoky flavor that's perfect for grilling season.
INGREDIENTS:
• 1½ lbs boneless, skinless chicken breasts, cut into chunks
• 1 green bell pepper, cut into pieces
• 1 red bell pepper, cut into pieces
• ¼ cup olive oil
• 3 cloves garlic, minced
• 2 tbsp lemon juice
• 1 tsp dried oregano
• 1 tsp smoked paprika
• 1 tsp kosher salt
• ½ tsp black pepper
HOW TO MAKE IT:
1. Marinate the Chicken:
Place the chicken pieces in a large bowl and add the olive oil, garlic, lemon juice, oregano, smoked paprika, salt, and pepper. Toss until every piece of chicken is evenly coated and refrigerate for at least 30 minutes. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
2. Build & Grill the Skewers:
Thread the marinated chicken onto the skewers, alternating with pieces of green and red bell pepper. Preheat the grill to medium-high heat and lightly oil the grates before adding the skewers. Grill for approximately 4–5 minutes per side, turning frequently, until the chicken is nicely charred and reaches 165°F internally.
3. Finish & Serve:
Remove the skewers from the grill and let them rest for a few minutes before serving. Spoon any remaining juices from the plate over the chicken for extra flavor. Serve hot with your favorite rice, salad, grilled vegetables, or dipping sauce.
🥭 PANGO PARFAIT DESSERT
Bright, tropical, and refreshingly sweet, this Pango Parfait layers juicy mango and pineapple with creamy vanilla yogurt and crunchy granola. Coconut, almonds, honey, and fresh mint add delicious layers of texture and flavor. It's an easy, beautiful dessert that's perfect for ending a summer meal.
INGREDIENTS:
• 2 cups ripe mango, diced
• 2 cups vanilla Greek yogurt
• 1 cup granola
• ½ cup whipped cream
• ¼ cup honey
• ½ cup pineapple, diced
• ¼ cup shredded coconut
• ¼ cup chopped almonds
• 1 tbsp fresh lime juice
• Fresh mint leaves, for garnish
HOW TO MAKE IT:
1. Prepare the Fruit:
Place the diced mango and pineapple in a bowl and gently toss them with the lime juice and 1 tablespoon of honey. Let the fruit sit for 5–10 minutes to allow the flavors to blend. Reserve a few pieces of mango for the top of each parfait.
2. Layer the Parfaits:
Spoon a layer of vanilla Greek yogurt into the bottom of four serving glasses. Add a layer of granola, followed by the mango-pineapple mixture, shredded coconut, and chopped almonds. Repeat the layers until the glasses are nearly full, finishing with a generous spoonful of whipped cream.
3. Finish & Serve:
Drizzle the remaining honey over the whipped cream and arrange the reserved mango pieces on top. Garnish each parfait with fresh mint leaves and a small sprinkle of granola or almonds. Serve immediately for the best crunch, or refrigerate for up to 2 hours before serving.
