-more commonly sold in supermarkets
-contains much higher levels of coumarin
CEYLON
-native to Sri Lanka
-sweeter, milder flavor
-very low levels of coumarin
-often preferred and chosen for medicinal or daily use
* WHAT IS COUMARIN
-natural compound found in cinnamon
-small amount is acceptable
-consume regularly or large amount may:
โขstress or damage the liver for some people
โขincrease risk of bleeding when combined with blood thinning medication
* USES
-cassia often used for cooking and taste
