Easy apple and cinnamon overnight oats

Tomorrow’s breakfast can be ready before you go to bed.

Combine in a jar:½ cup rolled oats • ½ cup milk of choice • ¼ cup plain yoghurt • 1 tablespoon chia seeds • ½ grated apple • a pinch of cinnamon

Refrigerate overnight. In the morning, top with walnuts, pumpkin seeds or berries. Adjust the liquid for your favourite texture.

Warming ginger, pumpkin and red-lentil soup

Comfort in a bowl—simple, colourful and full of plant foods.

You will need:½ pumpkin, cubed • 1 onion • 2 carrots • 1 cup red lentils • 1 tablespoon grated ginger • 1 teaspoon turmeric • 1 litre low-salt vegetable stock

Sauté the onion, ginger and turmeric. Add everything else, simmer until soft, then blend. Finish with black pepper, coriander and a squeeze of lemon.
