I was in Bali, the land of coconuts, trying to find fresh coconut milk for my matcha. But all I could find was packaged coconut milk with extra ingredients that don’t belong in coconut milk! 🌴🌴

So I made my own with just 1 ingredient - a fresh green coconut! Simply blend the coconut water and coconut flesh, strain and it’s ready. You can thin it out with some water if the coconut is a little more mature. It’s my favourite way to make fresh coconut milk and so delicious 😍😍

I found it surprising that my local hosts don’t make coconut milk this way and now go for the convenience of packaged milk! Happy to have converted them! 😍😍

Now this is the way to eat fresh toddy palm! 🌴

A clean sugar free version to the childhood dessert I grew up with where all the ingredients came from a can!

My favourite combination of tropical fruits, fresh coconut milk and crushed ice combined with healthy fats from avocado make this such a satiating treat! It might sound weird to have avocado this way but I grew up only having it as a sweet not savoury.

The sweet variations of textures and scents from fresh papaya, jackfruit, avocado, toddy palm, dragonfruit and mangosteen doesn’t get any better!

Jackfruit seeds are often snacked on throughout South East Asia while most in the West throw them away 🤯

These crispy Jackfruit seed chips in Sambal are probably the tastiest way I’ve eaten them!

They’re sliced thin, fried in coconut oil until crispy, then coated in a Balinese sambal made with fresh tomatoes, onion and candlenut.

Simple ingredients, incredible flavour.

Jackfruit seeds are packed with fibre and resistant starch, which is another reminder how traditional cultures know to use the whole harvest and the wisdom I keep coming back to.

Biji Nangka / Jackfruit Seed Chips in Sambal 😍
- 2 handfuls of jackfruit seeds thinly sliced and soaked in water for at least an hour
- Make the sambal by blending 2 fresh tomatoes, 2 shallots, 1 candlenut (optional fresh chilli & garlic) with a little water
- Add the sambal to a pan and lightly simmer to reduce with 1 Thai lime leaf
- While sambal is reducing, fry jackfruit seed slices in coconut oil until golden brown, drain on paper towel
- Add the cooked jackfruit seed chips to the reduced sambal to coat and flavour
- Serve immediately and enjoy! 😋

This isn’t amber or a gemstone… it’s one of my favourite foods for healthy, glowing skin 😍

This is peach gum, a natural resin from peach trees known as the “plant collagen” food in Chinese cuisine. Look for the beautiful irregular pieces with different shapes and shades of golden amber, just as nature made them. 🌱

You will often find debris from the tree still attached to the gum. This is how you know you have unprocessed peach gum that won’t dissolve with cooking.

Soak it, cook it, and it transforms into a delicate jelly that’s texturally perfect in so many desserts as it doesn’t hold any flavour of its own. The greatest superfoods aren’t new discoveries. They’re ancient wisdom passed down through the generations.

Tell me if you think this peach gum also looks like a Koala bear?! 😍

A little goes a long way!
Soak 2-3 Tbsps of raw unprocessed peach gum in 2-3 litres of water overnight. Strain and remove any visible debris, add to a pot covered in water and simmer for 30-45 minutes with desired ingredients like dried longan, whole soaked tremella, jujube dates or monk fruit to naturally sweeten.

Store in the fridge and consume in 5 days 😋

Have you ever eaten a fruit that tastes like lemon meringue pie straight from the tree?😍😍

This is Annona mucosa, known as Rollinia, or the lemon meringue fruit. In one of my earlier posts, I showed the best time to Harvest as, the ripening stages completely change the experience.

Some eat it when it’s creamy and custard-like with an exceptional citrus fragrance but my favourite stage is a little later, when it becomes soft and jelly-like with more mucilage which is great for the gut 🙌

This stage isn’t for everyone, but that’s why nature is the best, every stage of ripeness creates a choice that’s right you! 😋@

This is the beautiful Toddy Palm 🌴 one of my favorite childhood desserts and memories. It grows on a palm like a coconut, but unlike a coconut it’s much easier to open once you cut through the thick husk. You’ll find 2 to 3 jelly seed pods filled with a hydrating juice. As it matures It has quite a neutral taste, the texture is like a cross between coconut flesh and aloe vera unless you’re lucky enough to get the very young toddy palm which is soft, silky & sweet.

It’s otherwise traditionally eaten with a sweetened syrup. I love it just as it is on its own or mixed with tropical fruits, crushed ice, and coconut milk as the most refreshing dessert you could have in the tropical heat 😍🥥

Snake Fruit 🐍 Native to Indonesia with is snake like skin and grown on a short thorny palm in beautiful bunches, it’s probably one of the strangest looking fruit and now to me one of the tastiest 😋 I’ve not had the opportunity to have snake fruit this fresh as I’ve eaten it in other parts of South East Asia where it probably had to travel a while to get to. It’s so crisp and sweet like a sweet floral crunchy apple.

You can tell you have the freshest and best when the flesh is white, crispy and the skin is easy to peel.

It’s probably one of my top 10 tropical fruits, high in fiber making it great for the digestive system too!
