THE BRAIN “FEELS”
The brain can “sense” sweetness and transform that signal into a physiological and behavioral response.
When we perceive something sweet, brain circuits involved in reward, motivation, and learning become active. Dopamine helps make that stimulus salient:
“This interests me.
I like this.
I want this.
I will look for it again.”..
Sweetness is one signal. Nutrient sensing is another. And the metabolic consequences of eating add yet another layer...
And when blood glucose changes, hormones change. The nervous system integrates information coming from the gut, metabolism, and the environment.
